Happy hump day, foodie friends! Kendall here, taking over What I Ate Wednesday while our Alexis is off on another adventure.
Here's a picture of us yesterday before she left! It was basically the first time I haven't been in leggings and a sweatshirt or behind the Alchemy counter covered in smoothie when with her, so obviously we had to snap a cute pic.
This time, she's in our nation's capital doing research for the next restaurant concept (which is going to be on Ohio State's campus). Who knew D.C was such a cool foodie mecca? We're all living vicariously through her delicious pictures and insta stories.
Today was another insane college day of running around. No surprise there. I tend to jam pack my days to the fullest; but luckily I also jam pack my days with yummy eats. In the words of Hummusapien, lettuce dive in!
I woke up super early to get my study on, but also to get my drank on. I start every day with liquids. I feel so much better after having a big cup of steaming green tea with lemon and apple cider vinegar. I've been feeling a bit sick for the past week, so today I supplemented my liquids with the most amazing cold-pressed Easy Beet juice (apple, beat, pear, lemon) from Alchemy.
I told myself this week that I have to work on increasing my veggie intake. Ya girl freaking LOVES her smoothies, pasta, dark chocolate, and peanut butter. Today's brekkie was a "big-o-omelett-o," as my mama would say. I stuffed it with sautéed kale, half an avocado, garlic, and nutritional yeast---sounds weird, but actually so delish. I topped it with black pepper and a whole lot of hot sauce with a sliced apple on the side.
I overestimated the time I needed to make my super-veggie omelette, so I headed out early and stopped into my favorite on-campus coffee shop to pick up an almond milk latte. I just had to snap this selfie pic with my Indians jersey because people, my team is in the World Series and I'm freaking out! #rolltribe
After a long class and a crazy circuit cycle session (burpees and v sit-ups included), I walked over to our student union where I did homework and chomped on this huge apple. I think I have an apple addiction. Like, I need to eat at least two big, crisp apples a day or else I'm just not satisfied.
After a bit of studying, I was STARVING. I basically ran home so that I would have enough time to whip up lunch before having to power walk to two more classes. Lunch was a super easy to make power bowl with sautéed cauliflower rice and shaved brussels sprouts topped with broccoli, sweet potato, tuna, a bit of spicy mustard, and black pepper.
After my last two classes, my friend Jacqueline and I went straight to the mall to find dresses for some fun events we have this weekend and literally shopped 'til we dropped. Shopping honestly make me so hungry. Even hungrier than an intense workout. Thankfully the mall has one of our favorite restaurants, Northstar Cafe. I ordered my absolute favorite Buddha Bowl with tofu, and of course I devoured it without even thinking about taking a pic...so here is a picture of my exact same meal with better lighting that I had in my camera roll because I am at Northstar basically every other day.
We just drove home with bellies full and hearts happy. I am now typing this blog post while sitting on the edge of my couch, nervously watching the World Series. Bases are loaded with the Cubs batting, and our pitcher has a full count. On that note, I am about to make a big cup of relaxing mint tea because my blood pressure is at an all time high.

I'm trying to get in shape until my second child is born (in January) and I'm looking at Power walking as an option. I'm no fan of sports, but I do enjoy walking in nature. But, and here is the problem, I live too far away to get out often enough. But I'm trying 😉
