Whew! FNCE was delish and fun and exhausting and inspiring all rolled into one. Recap coming soon!
I was sooo ready for a hugh jass smoothie bowl when I woke up. I did my usual blend of frozen wild blueberries, frozen spinach, frozen cauliflower, vanilla protein powder, cacao, hemp seeds, spirulina, cinnamon, turmeric and almond milk topped with Power O’s and cacao nibs (find all the product links on my Shop page!).
I also had some local organic Shagbark corn chips with roasted garlic hummus because you know I crave savory after sweet. Of course I downed coffee when I got to Alchemy, too.
Lunch was Brassica leftovers (lentils and rice, greens, a ton of roasted and pickled veggies, baba ganoush, hummus, and falafel) with frozen lentils, hummus, hot sauce, and Krazy Kraut sauerkraut added to beef it up.
In other news, I recently found out that I was chosen as one of 100 business leaders around the country to attend Yelp’s Coast to Coast conference in San Francisco next month!! I’m pretty much on cloud nine right now. Squeeeeeeal!
Back to the eats. I spent most of the afternoon at a coffee shop where I enjoyed an almond milk latte and chocolate peanut butter chip Thrive by GoMacro bar. Guys, I’m obsessed. They’re 100% organic, fair trade, low in sugar, and have the most stellar ingredient list. They taste amazing, too! When I need something a bit heftier, I like their protein bar.
I also had a big apple and some carrot sticks. I needed all the produce after a weekend of eating out in Boston!
Dinner was more whole wheat pasta from Italy with marinara, mashed bean balls, nutritional yeast, and basil, bread with olive oil and balsamic, roasted broccoli with smashed garlic and red pepper flakes, and a big salad per usual. The boyf adores this meal!
Speaking of that hunk, would you guys have any interest in him taking over a What I Ate Wednesday? I thought that would be fun!
Dessert was a Paleo Pumpkin Bar from the freezer. DEEEElish!

I would love to see your boy’s WIAW. I’ve been married 3 years now (today is my anniversary! woot!) and I”m still getting used to grocery shopping/meal planning for two. Also, that man can eat some cheese! Although he’ll definitely say that his veggie intake has increased dramatically since we’ve been together.
