Hi, foodie friends! Alexis is currently stuck in Toronto on her way back from Italia (no worries though, you know already know she’s finding all the yummy Canadian eats).
Have no fear! She will be back on Thursday with some dreamy muffins. For now, it’ Kendall from Squad Hummusapien here to talk all thangs delish, chocolate cake and cheese boards included.
So you know those days where you don’t stop moving? Those days where you are constantly running to the next obligation and checking your shiny new Moleskine planner all the while looking like a maniac chickadee running around with your head cut off? Okay, I know this is about to sound crazy, but these are my FAVORITE type of days. I run back and forth across campus feeling like the boss a** Carrie Bradshaw running on the streets of Manhattan. Ya’ll know the feeling—putting in werk. Today was definitely one of those days.
Unfortunately, there can be one major downfall to these seemingly invincible days: food. Scheduling in nutritious meals can seem like yet another task on your heavy to-do list. What I hear so often from my busy, super-involved peers are things like “I haven’t eaten all day,” “I don’t have time to eat,” or “I grabbed an apple on my way to class 8 hours ago.” I totally 100% get where they’re coming from, but it doesn’t have to be like that!
It’s not always pretty, precisely planned, and perfectly balanced, but it doesn’t always have to be because #life and #chocolatecake happen.
I got up a little bit earlier this morning to whip up and enjoy my absolute fave breakfast and obvi it’s a Hummusapien recipe! This right here is The Breakfast Smoothie with my addition of half an avocado and topped with a sprinkle of pure bee pollen.
After class I had major munchies. On days that I know I’ll be on campus until the evening, I pack at least two snacks to eat on the go. Today I scarfed this Caramel Almond Pumpkin Spice Kind Bar on my way to one of our digital labs. Hi, Autumn!
A couple hours into staring at photoshop, I pulled out these Lemon Coconut Protein No-Bake Bites. I made them late last night per Alexis’ recommendation and holy moly talk about heaven!
I finally left the lab and headed to our recreation center for a circuit cycle class (obviously eating on the way).
After cycling I was starving so I got my greens in with this kale, quinoa, berry salad that I bought from one of the cafes at the rec center. Thank the Lawd for meal plan money that rolls over from last year. I ate while doing some scheduling for the Hummusapien Pinterest, so go follow to see literally all of the yummiest food to ever exist!
I wasn’t satisfied after my salad and was in the mood for something crunchy, so I picked up this apple as I left the gym. I was heading to two more classes and this lunch is definitely what got me through.
After class, my friend Alicia and I made our weekly trip to TJ Maxx and Target. Half of the time we don’t even need to buy anything, but going keeps us sane, ya feel? I started getting hungry while roaming through Target, so I picked up a pack of the best PB to ever grace this earth.
When I finally got home I was famished, but only wanted to snack since I had plans for a wine and apps night with my BFF, Emily. On the counter was a beauteous dark chocolate bundt cake made by one of my roomie’s moms, lovingly referred to as “Babs.” Of course I had a few forkfuls of cake and some leftover chickpea/veggie soup that I brought home from Alchemy.
When Emily got home we baked brie, sliced apples, spooned hummus, unwrapped chocolate (it was the Chocolate Lover’s Bar from Trader Joe’s which I 10/10 recommend), broke open a bag of GF multigrain chips, and TA-DA!
Yeah we staged this on our coffee table and took overhead pics of it for ten minutes, but can you blame us? We ate our way through this spread while watching The Holiday. If you were following my snapchat story during this then I’m sorry for all of the Jude Law snaps…but also you’re welcome.
