Why hello there, hungry hippos!
It's 10:13pm and we just finished eating and doing mountains of dishes (thanks, broken dishwasher) so right now all I want to do is lay on the couch and watch Lost whilst noshing madly on my beloved Double Chocolate Cookies.
Sorry for sounding like a broken record here, but breakfast was the new normal: DIY oatmeal cereal! If you want the nitty gritty recipe details, check out my Instagram post from yesterday.
I also had a delish coffee with soymilk from Stauf's that the girl gave me for FREE because she's a dream.
Lunch plus snacks was leftover Lentil Loaf from The Oh She Glows Cookbook with lots of ketchup and mustard (this loaf is another amazing option), sliced cukes with hummus, a 4-Ingredient Brownie (so yummy, I used this chocolate pumpkin seed protein powder) and a couple Chunky Monkey No-Bake Bites from my long lost Aussie pal. No fruit because I was gone all weekend and didn't get to the store.
I snacked on sips of random Alchemy smoothies throughout the day...
...plus a few chunks of our locally baked ciabatta with carrot hummus while I ran around. I also noshed on some lavash bread we're testing for a new concept.
Before Body Pump I had more hummus and brown rice cakes with hot sauce because the obsession is so real! Snapchat picture...guilty.
Dinner was a mix of zucchini noodles (loving my Inspiralizer!) and whole wheat noodles, Bean Balls, and plain tomato sauce with olive oil, coconut sugar, fresh basil, and spices mixed in since we were out of marinara.
We also roasted green beans in olive oil, salt, pepper, and garlic to have on the side. Lettuce not forget the nightly salad of organic mixed greens, local tomatoes, peppers, cukes, shredded carrots, balsamic, olive oil, and spices.
Oh and I also had half of Jeff's Texas Toast. Yes, that happened.
Dessert was a Vegan Double Chocolate Cookie microwaved from the freezer stash (with almond milk, of course) and then a Natural Delights medjool date dipped in Sunbutter because it's addicting. Chocoholic TO DA MAX.

I love that you added zoodles with your noodles. Zoodles are great, but not always as filling!

You always pack the most delicious lunches and snacks! I need to whip myself up a batch of those brownies, they're so easy and look so freakin' fudgy. Throwing one in my lunch will definitely make going back to school easier. After reading all your What I Ate Wednesdays, I got really jealous that you always had delicious muffins and cookies so I started keeping a stash of cookies and muffins in the freezer too, haha.
