    What I Ate Wednesday

    Hola humtastical legume lovers!

    You're going to be so proud of me. I ate leftover PANCAKES for breakfast. AKA, I didn't have a smoothie bowl. I know...gasp.

    The boyf and I have a tradition where we whip up a yummy breakfast on Sunday and actually sit down to eat together. We're always running around in the morning, so it's really nice to sit back, relax, actually taste our food, slowly sip coffee, and just enjoy each other. I look so forward to it! It pretty much always involves blueberry pancakes topped with strawberries, banana, almond butter, and maple syrup plus lots of coffee with cinnamon and almond milk, and sometimes fried eggs.

    Simple Mills Pancake and Waffle Mix is our absolute favorite. The mix has a super wholesome and healthy ingredient list and the pancakes always come together in no time. Not only do they have the dreamiest taste and texture, but they're also fool-proof. You can't mess them up!

    Lunches lately have been big salads. At the beginning of the week, I buy one of those huge tubs of organic mixed greens and spinach, shredded carrots, cucumber, peppers, and grape tomatoes. I've also been adding a serving of Trader Joe's fully cooked lentils, avocado, and a bunch of baked sweet potato cubes or whatever roasted veggies I have on hand. For dressing, I do a drizzle of olive oil, balsamic vinegar, salt, pepper, garlic powder, and oregano right before I eat it so it doesn't get wilty. Stir, eat, repeat! I used to be really bad at making salads but prepping ahead of time has been a lifesaver.

    Snacks included a Chocolate Peanut Butter Oatmeal Cup and a Morning Glory Breakfast Cookie.

    I also had a small organic Fuji apple and a kiwi. Fruit is my fave!

    Final snackage included some raw veggies and a Wholly Guacamole pack. Can you tell I'm trying to eat more raw veggies?!

    I was still hungry before I hit the gym so I had a few handfuls of dry-roasted edamame.

    Post Body Pump fuel was a hugh jass helping of Baked Spaghetti with Tofu Ricotta (which is very carnivore approved, I might add) with green beans.

    Then the boyf made a delish kale salad so I had a bowl of that, too.

    Then I roasted a pound of radishes with olive oil, salt, and pepper and proceeded to eat ¾ of the baking sheet right out of the oven. Oops. Not even surprised. By the way, they were INCREDIBLE. Mind blown.

    For dessert, I had a So Delicious mini vanilla ice cream sandwich. Um, these are the best thing to ever happened to me. Get your hands on them immediately.

    Aaaaand I officially ate three million servings of veggies.

      Wow! I have never seen radishes baked like that, I am so going to attempt to re - create these! Also, how yummy are those coconut mini sandies? In love. Thank you for your constant inspiration!

      Your eats look amazing! Do you think there's any way to make the baked spaghetti by subbing tofu for something else? I can't eat tofu, unfortunately. I would love a suggestion!

      I really wanna start taking more group fitness classes! I feel like it'd be a really fun change from doing fitness videos or routines at home on my own or going to track and volleyball practices. Those So Declicious ice cream sandwiches look amazing! I've recently gotten hooked on Nada Moo ice cream myself??.

      I look forward to WIAW every week because I find it reassuring to know that I am not the only one who snacks this much!
      I made a twist on your oatmeal cups last week and they have been a great (and filling) snack for me. With some type of nut butter spread on them, obviously.
