This morning was quite a rushed one since I attempted to work out, get ready, and eat breakfast all before a morning appointment to get my pearly white cleaned. I tend to overbook myself.
I was out of smoothie packs (truly tragic) and had an avocado to use up, so I flew out the door with avocado toast on Ezekiel with red pepper flakes and sea salt plus a big thermos of coffee with almond milk.
On my way back to Alchemy, I sipped on a trilogy Kombucha. Kind of definitely addicted.
Lunch was a big fat Mexican chopped salad with romaine, black beans, peppers, tomatoes, green onion, and mango with a hummus avocado dressing. It's coming your way soon!
I also snacked on a peanut butter banana protein baked oatmeal cup, which is basically the cousin to my lemon coconut baked oatmeal cups. This is my favorite version so far! Coming soon my friends, coming soon.
Taste testing new Alchemy creations is one of the biggest perks of my job. Today we worked on a new zucchini noodle salad with kalamata olives, tomatoes, pesto, and pistachios. Who's excited for summer?!
Later on I snacked on a fabulously juicy orange that my lovely boyf sliced up so perfectly...
...and another one of these four-ingredient brownies that are basically the stuff of dreams. I used peanut butter instead of almond butter, chocolate Vega, and some norbu plus super ripe bananas. Arman used to make these for me on the regular when he lived in Columbus but now I'm left making them on my own. Desperate times!
I adore them out of the freezer warmed in the microwave for a bit! I made them yesterday and there's approximately two left.
Dinner was a big plate of noodlies with roasted veggies on the side. Nom!
To make this dish, I cooked up Trader Joe's quinoa fusili pasta and added a couple crowns of fresh broccoli florets during the last few minutes of cooking. Meanwhile, I sautéed a bunch of kale in olive oil and garlic. Once that was done, I crumbled up a block of tempeh and sautéed that in olive oil, soy sauce, maple syrup, garlic, and nutritional yeast. Then I mixed it all together with a jar of TJ's organic tomato basil pasta sauce. The carnivorous boyf approved!
I was craving something sweet before bed so I blended up some frozen bloobs, frozen spinach, almond milk, and chocolate Vega in the Nutribullet. I topped it with cocoa powder and Power O's post picture. Hit the spot.
