    What I Ate Wednesday

    Hello, my gracious garbanzos! Let's dig into another round of eats.

    I made fave smoothie packs as part of my food prep this past Sunday, so yesterday's breakfast was my usual Blueberry Cacao topped with Power O's and cacao nibs (forgive the recycled picture...the one from this morning was super unfortunate looking).     I had to pick up a bunch of nut butter for Alchemy from Krema Nut Company, so I snacked on some of my favorite rosemary almonds while I waited. Kombucha is my recent obsession and Synergy is my favorite flavor, so that happened on the car ride home, too!

    Lunch was a hugh jass bowl of my Rosemary Roasted Potato, Mushroom and Lentil Salad drizzled with sriracha. I didn't have any rosemary so I left it out and it still tasted super dreamy. If you haven't tried this salad yet, do it!

    I made a goal this month to eat more veggies, especially raw ones, so I've been taking a baggie of sliced carrots, celery, and baby cucumbers to dip in hummus (Oasis roasted garlic with hot sauce) as a snack. It's made a big different in my vegetable intake! I also had an organic sliced Fuji apple.

    I don't normally prep nearly as much as I did this past weekend, but I've really been slacking so I went crazy! Here's a peak at what I prepped on Sunday:

    I made roasted tofu with peppers, zucchini, and sweet potatoes, sliced veggies, smoothie packs, Loaded Veggie Tuna, carrot cake protein bars (coming soon), roasted snap peas and shallots (my new fave!), Rosemary Roasted Potato, Mushroom and Lentil Salad, and a new curried raw brussels salad similar to this one.

    I snacked on some Curried Chickpea Salad before I left work.

    Dinner was a salad the size of the moon that had pretty much everything in my fridge in it, including baby kale, tomato, carrot, pepper, avocado, pumpkin seeds, roasted tofu, zucchini, peppers, ginger carrot dressing, hot sauce, and balsamic vinegar. It was by far the most random salad I've ever laid mouth on but I was STARVING after Body Pump and it did the trick!

    After dinner I munched on a handful of almonds, chocolate chips, raisins, and coconut along with Trader Joe's dried mango, which is basically the best thing that ever happened to me.
