I had a super busy morning packed full of nutrition counseling, meeting with distributors, ordering new retail items, social media stuff, etc. I sipped on an unpictured coffee with soy milk at Stauf’s coffee shop while I worked.
I almost always have something with my smoothie but I was running around like a chickpea with my head cut off all morning. Once I got back to Alchemy, I hopped behind the counter and helped out with our every-one-has-a-snow-day lunch rush.
Then I stuffed my fave with this fantabulous veggie teriyaki stir fry. Keep your eyes peeled for the recipe on Monday!
We’re rolling out a new Portobello sandwich with roasted red pepper, red onion, arugula, and basil cashew mayo so I took several bites during the logistical discussion of making the idea an actual menu item. My favorite kind of meeting!
Afternoon snackage included a Blueberry Banana Streusel Muffin (please go make them) with more coffee…
…and an organic fuji apple. New go-to!
After a sweaty Body Pump class at The Fitness Loft, my gal pals and I went to Taco Tuesday for dinner at The Kitchen. The theme was street Thai and Indian, so I had a green papaya veggie salad and the vegetarian taco, which had chickpeas, veggies, date chutney, and lots of other stuff piled onto house-made crispy crackers. Yum!
I was still pretty hungry when I got home, so I munched on leftover kale salad with bell peppers, avocado, and sweet potatoes, an orange, and some apple with peanut butter.
