Happy hummus hump day, my black bean babes!
Post Barre3 breakfast was obviously a smoothie, but I changed it up a bit from the usual mix. Instead of wild blueberries, I used a mix of frozen dark sweet and red tart cherries in addition to frozen spinach, Vega Protein + Greens, cacao, a bit of coffee grounds for a mocha flavor, and ice. Deeeelish. On top was a crumbled no-bake bite from Alchemy (similar to these cherry vanilla protein bars).
I also had a large coffee with a splash of vanilla soy milk and cinnamon from Alchemy. Caffeinate me, baby!
I snacked on a cheezy vegan spinach and chive biscuit that I created for my friends at Simple Mills. You can find the recipe on their Instagram page, which I'm taking over for the week! They're reeeeeeal good.
Lunch was a big bowl of thai quinoa fried rice, which will hopefully be posted on Monday. It's a rendition of my beloved quinoa fried rice. Get excited! On the side I had an apple and some fab chia pudding.
For the chia pudding, I mixed ½ cup chia seeds, 2 cups unsweetened vanilla almond milk, some vanilla and almond extract, fresh raspberries, and norbu to sweeten (thanks, Arman). I'm definitely on a chia pudding kick.
I met my girlfriends for tacos at The Kitchen's taco tuesday for dinner, which is conveniently located two minutes from my humble abode. The them was "disco." How adorable, right?
I got the "Dazz Band Let it Whip" with sautéed greens, cannellini beans, onions, carrots, and polenta plus the "Thelma Houston Don't Leave Me This Way" with curried chickpeas, sweet potatoes, zucchini, onions, roasted red peppers, rice and cilantro. They were AMAZING!!
My tumbly was still rumbly when I got home so naturally I finished the rest of my Fusian sushi from the night before...
...along with some raspberries...
...and some puffed corn cereal with almond milk. So random. So good.
