    What I Ate Wednesday

    Heyy-aaayyyy! Hoooo-wooo!

    I had to drink my breakfast yesterday morning (blueberry cacao smoothie with Vega), which made me realize that my obsession with breakfasting on smoothie bowls is so real. I love being able to eat it with a spoon. I love the sprinkling it with toppings. I love sitting back and taking six minutes to eat it and actually enjoy it rather than slurp it down in thirty seconds on the way to the restaurant supply store. Oh well, right? So is life!

    Before I sat down to eat lunch, I did a bunch of taste testing per usual. Quality control, my friends! I took bites of our side salad (roasted cauliflower, black beans, tomatoes, etc.), quinoa fried rice, Mediterranean quinoa salad, hummus, and more. Alchemy has its perks!

    Coffee with a splash of vanilla soy milk and cinnamon happens every single day, whether or not I remember to post the picture. I remember when we started Alchemy and I proclaimed that I wasn't drinking coffee. HA. I think I'm addicted. I need coffee to survive. THERE, I SAID IT. What sane person can get up at 5am nearly every day and not drink coffee? I'm not God.

    Lunch was a new kale salad recipe I'm working on and let me tell you, it's out of this world. Get ready for rosemary roasted potatoes, lentils, shrooms, walnuts, and a shallot dressing. The lunch of your dreamies, basically. I had sliced cucumbers from Door to Door Organics with Oasis roasted garlic hummus on the side.

    Random note...but I forgot to show you beauties the food prep I did last week with a client! It was the second time we cooked together and we had a total blast. We made fall vegetable baked spaghetti with pumpkin tofu ricotta, cinnamon raisin no-bake bites, basil balsamic chickpea and kale salad (forgot how good this is!), sweet potato lentil kale detox salad, and vegan corn and wild rice chowder (also forgot how good this is). It felt so great to re-make older recipes! Not gonna lie, I wanted to face plant into all of her food by the time we were done with it all.

    Okay back to being an eating machine. Afternoon snackage included one of our new coconut coffee no-bake bites (OMG, too delish)...

    ...and a sliced Granny Smith Apple with cinnamon. I'm really into green apples as of late.

    There was a random half a sweet potato leftover in the fridge so I ate it straight up like an apple while I rushed around the kitchen. Normal.

    Dinner was brown rice sushi with salmon, cucumber, asparagus, carrot, avocado, sweet potato, green onion, sriracha, and sesame seeds from my loves at Fusian in Grandview. We got cucumber salad on the side, too. I adore Fusian and the people behind it. Long live fast casual sushi!

    Some salted almond dark chocolate may have also happened. Once you pop you just can't stop!

      Glad I get to still see what you're up to via da blog 🙂 miss you soooooo much and can't wait til I'm out of school and have a normal life. That way only ONE of us will be currazzzyyyy busy and maybe we can actually make some time for each other more than every couple weeks. love you lots & lots!

      Awesome! I experimented and made your corn and rice chowder last winter and it is a favorite! I have been meaning to make it now that we are entering the cold dark tundra yet again!
