Hello my little jalapeños!
Yesterday I ate ALL the food. I basically went to an early Barre3 class and came home a raging hunger beast that wouldn’t tame itself all day.
When I got home from Barre I whipped up a smoothie with 1 cup frozen blueberries, 1 cup frozen spinach, 1 1/2 cups almond milk, 1 tablespoon cacao, a date, some vanilla extract, and a scoop of my fave brown rice protein powder.
Before I headed into work, I was craving something savory so I ate a fried egg on Ezekiel toast with Oasis garlic hummus. Hit the spot!
I also dove into my stash of roasted sweet potatoes and ate a bowlful with more hummus. And hot sauce.
Aaaaand then I ate a sliced apple with cinnamon in the car. Why do sliced apples taste so much better than whole ones? #thatisthequestion
Lunch was my beet, green bean, and cannelini salad with dijon dressing plus some tomato, chickpea, and coconut soup I made for Alchemy’s soup of the day.
I also sampled some curried Brussels sprout salad. It’s DIVINE. You should stop what you’re doing and go make it.
Snacks included a couple vegan chocolate banana muffins (obviously).
Dinner was baked spaghetti with tofu ricotta, which I really cannot get enough of. Once you’ve pressed the tofu, it seriously comes together in less than 10 minutes. I ate like a fifth of the pan in five seconds. PS what if all of my blog pictures looks as ugly as this one?
Naturally I was craving nut butter after dinner so I snacked on celery with sunbutter.
And then I ended the night on a high note with the obligatory salted almond dark chocolate night cap with Trader Joe’s unsweetened vanilla almond milk straight from the carton. Oops did I just say that out loud?
