Howdy, my hummus lover beans!
I got to sleep in for a bit before my nutrition appointments at Alchemy this morning and it was quite a treat. Life has been crazy and sleep has definitely not been a priority for me lately. No bueno.
I started off the day with my typical blueberry cacao smoothie made with 1 cup frozen wild blueberries, 1 cup frozen spinach, 1 tbsp hemp seeds, 1 tbsp raw cacao, ½ scoop Vega One chocolate protein, and plenty of almond milk. It always tastes better when drank out of my fave Barre3 water bottle, duh.
I also had a brown rice cake with hummus and hot sauce because....savory.
Sipping on coffee with vanilla soymilk is a must. Always.
Lunch was Alchemy's delish soup of the day, which was red lentil with local organic purple potatoes.
I also sampled our next soup of the day since the other one was almost gone.
What's soup without avocado toast? Dreamy.
I also had a few bites of leftover sweet potato fries from The Crest and a couple sips of a blueberry cacao smoothie. Snackities!
Dinner was my fave vegan enchiladas (made with chickpeas and no greens since I didn't have any) with a fried egg, salsa, leftover roasted cauliflower and broccoli, and roasted squash.
Then I stuffed my face with handfuls on handfuls of Annie's bunnies because...bedtime snacks.
