    What I Ate Wednesday

    Hayyyy my ferocious figs!

    breakfast

    I finally switched up my breakfast to some more seasonal fare. Lately I've been making my Pumpkin Pie Smoothie with Vega Protein + Greens vanilla protein powder, less liquid, and a huge handful of spinach. Then I eat it in a bowl topped with cacao nibs and Love Grown Power O's for crunchosity. Seriously such a dream of a breakfast.

    I wanted savory by the time I was done so I munched on a brown rice cake with hummus.

    lunch

    Lunch was a scrumptious salad combo from the fairly new Little Eater at The North Market. The wheat berry, kale, walnut, and cranberry salad and the roasted beets were my two faves. I will definitely be going back!

    We also shared one of the breakfast cookies.

    snack

    Before Body Pump, I snacked on part of Nikki's blueberry almond butter acai bowl with puffed quinoa and strawberries. She was helping us fix up the menus. Time to get the Pumpkin Pie Smoothie back on the menu board!

    dinner

    My phone died on my way home and when I went to recharge it, it decided it didn't want to turn back on. The screen kept turning a very shocking hue of blue. It didn't turn back on till 9:30pm, and my dinner would have been quite cold by that time. So what I really had for dinner was a Luna burger with hummus, an egg + an egg white, roasted sweet potatoes, and Brussels sprouts. I dug through some old posts and found this old picture of my delish crispy baked tofu strips. Have you made these yet?

    Bedtime snackage included two fabulously chewy Medjool dates (fresh from my trip to Yuma!) dipped in Wild Friends' pretzel peanut butter plus a handful of my roomie's little cookies.

      Alexis, I literally just spent about 20 minutes going through your WIAW in search of this particular one because it suddenly occurred to me that i just HAVE to ask, where did you get those bracelets on your left hand in the picture with the smoothie bowl? I LOVE! 😀

      I'm sure you hear this all the time but I truly want your job! I'm a huge foodie but I have little time right now with 2 little children. When I look at your recipes they really remind me of such creativity that speaks of your passion and that is refreshing! Keep doing what you are doing! 😉
