Hiya, friends! I'm writing this as the sun is shining and the weather is simply gorgeous. These bright days are my absolute favorite! It's crazy how much food weather can lift my mood. Anyone else?
Breakfast
I've really big digging my overnight steel cut oatmeal with blackberries and this almond butter (it tastes like a sugar cookie), but I thought I'd rewind to Sunday's breakfast because it was so divine. I scrambled eggs for me and Jeff with freshly grated parmesan and stirred in fresh dill, parsley, and cilantro. I'm on this kick where I keep a bunch of herbs on hand (in jars of water in the fridge of course!) and it's so nice to be able to throw them into whatever for a pop of flavor and freshness.
I also made these pancakes. Plenty of coffee on the side! Also how adorable is that little dish for pouring maple syrup? Ugh, Target. Love.
Lunch
I made a big batch of Sweet Potato, Lentil and Kale Salad to munch on for lunches throughout the week and I forgot how amazing it is. I added a chopped cucumber, green onions, used ⅓ cup orange juice plus a splash of lemon juice for more acidity, and skipped the maple syrup.
I actually cooked the lentils in the Instant Pot. I did 1 ½ cups lentils and 3 cups water for 5 minutes on manual and then natural release for 10 minutes. So easy and they came out perfectly!
I also had some of these blue corn tortilla chips that I've been obsessed with dipped in hummus and hot sauce.
Snack
I met a friend for a latte at Fox and a walk around the park and we shared a couple of Alchemy's new lemon chia energy bites while chatting. Look at that sunlight streaming in!
Dinner
I made this Cod with Tomato and Herb Butter and holy moly, was it fab! I used defrosted from frozen wild cod from ALDI, onion instead of shallot, and water instead of broth but otherwise followed the recipe. I'm gonna make it next week for the fam for Passover since I don't eat brisket. (If anyone has must-make Passover recipes, send them my way!)
We enjoyed leftover brown rice, mashed sweet potatoes, and roasted asparagus, and a kale feta chickpea Alchemy salad on the side.
For a nighttime treat we dug into these yummy little dark chocolate peanut butter cups on sale at Kroger. Love having these easy treats on hand for any and all chocolate cravings.
