    What I Ate Wednesday

    Published Aug 12, 2015 · Modified Nov 8, 2021 · by Alexis Joseph · 28 Comments

    Hello my luscious legumes!

    breakfast

Lettuce talk about my eventful morning. I ran into Stauf's (which is now a walk away from my apartment, what a dream) to get coffee and write this post. The internet wasn't working, so I left. When I walked out, my car was gone. TOWED. In twenty minutes. What a pricey cup of joe. Tears.

Hence the late posting of WIAW. Forgive me?

I'm all moved into my new place! It now takes me thirty-two seconds to drive to Alchemy. And my favorite coffee shop. I can walk to Harvest Pizza. Like, I'm in heaven.

    granola bar

I'm still pretty much eating all my food from Alchemy because everything is still in boxes. Breakfast was my standard blueberry cacao smoothie paired with local whole wheat toast and hummus + micro kale.

I snacked on a chocolate chip granola bar that the lovely folks at Udi's sent me. It was chewy and delish.

    salads

Before I headed to Target/World Market/Bed Bath and Beyond to do some serious damage, I stuffed a curried chickpea and quinoa kale salad in my face.

I couldn't resist a cranberry pecan no-bake bite and coffee with soy on my way out. They're based loosely off this recipe for no-bake cherry vanilla protein bars.

    nobake

My hot date and I (did I just say that?) went to the new Crest on Parsons (Alchemy's sister restaurant) for dinner for their opening day. The decor is everything. The food is rustic and modern and light and comforting all at once. Be sure to check it out soon!

    app

After a beer or three, we shared the shankleesh appetizer since everyone was raving about it. Shankleesh is a traditional lebanese spread of feta, tomato, jalapeño, red onion, and parsley served with crostinis. I thought it was going to come out hot, but I was pleasantly surprised when it came out cold. It was mildy addicting with just the right amount of spice. I'd definitely get it again.

    dinner

For my meal, I ordered the quinoa and avocado salad with black beans, corn, rooftop radishes, pineapple and arcadian mixed greens with a citrus and cilantro vinaigrette. The pineapple really took it up a notch with unexpected notes of sweetness. Aaaaand I'd be lying if I said I didn't steal multiple truffle fries from my friend's plate.

Def jammed to Hold My Hand the whole time I wrote this post. Nobigdealio.

Thanks for bearing with my sporadicness (sporadicosity?) during this time of transition! I love you to pieces.
