I'm moving out and I have like, no food.
All of my lentils and brown rice and quinoa noodles and chickpeas are packed up in boxes. The only items I left in the pantry were my Vega protein power and cacao powder (for my daily smoothie bowls), brown rice cakes, vanilla extract, and cinnamon. AKA the things I simple cannot live without.
I made sure to stock up on Hilary's veggie burgers and Amy's burritos for quick meals in addition to some tempeh and a boatload of roasted veggies at Whole Foods in preparation for moving. For snacks, I dip everything in sight (mostly leftover roasted sweet potatoes/broccoli/brussels sprouts) in roasted garlic hummus with hot sauce. Thank God I had a stash of lemon coconut no-bake bites and vegan mocha chip muffies in the freezer for this sweet tooth of mine.
Aaaaaand I'll be eating most of my lunches at Alchemy, duh.
Each week I make four to five baggies of my morning smoothie bowl ingredients on Sunday evening, which makes it possible for me to wake up at 5:15am and leave for Alchemy by 5:50am.
In each baggie I put one cup of frozen blueberries, a scoop of plant-based protein powder, a cup of frozen flat-leaf spinach, a tablespoon of hemp seeds, a tablespoon of cacao, and a teaspoon of spirulina. In the morning, I throw one in my lunchbox and blend it at work with almond milk and vanilla extract. Top it with puffed quinoa or Love Grown Power-O's plus cacao nibs and you're good to go!
In addition to the smoothie bowl, I also had a piece of toast with hummus, red pepper flakes, and micro kale. Gotta have my sweet and savory.
Lunch was Quinoa and Kale drizzled with pesto. It was dreamy!
The Crest on Parsons (located right next to Alchemy) was doing a roll out of some new menu items, so I sampled roasted potatoes, beets, asparagus, pita, and salad before I left. No cornish hen for me! I can't wait for the opening next Tuesday.
When I got home I noshed on hummus with leftover roasted broccoli and a bunch of Udi's ancient grain chips. Super crunchy and delish.
For dinner I threw a Hilary's adzuki bean burger in the toaster and re-heated the roasted veggies I bought at Whole Foods. A big blog of hummus on the burger, obviously.
Can you believe the mess that is my apartment? I cannot wait until this move is over with.
I couldn't go to sleep without a vegan mocha chip muffin and almond milk. NEEDED IT.

I love that you make these smoothie bags, I need to start doing that! That quinoa salad looks amazing and for someone who is moving, you are eating pretty damn good eats! Going to check out that mocha muffin asap!

Haha I was the same way when we moved, but I'm pretty sure I still had more food around than most of my friends that eat out all the time 😉 But I rely on my snacks and I'm pretty particular about breakfast so I can't TOTALLY empty my fridge!!
I need one of those mocha muffins. They sound AWESOME.

I love your smoothie prep! Whenever I move it's almost fun trying to challenge myself to not buy any more groceries. I end up eating the most random combinations of food together. Transition time is tough, it's inspiring to see your eating habits during your move!
