    What I Ate Wednesday

    Lentil lovelieeees!

    My work life is CAH-RAAAAAZY at the moment. Long, long days. Trying to make meals slurpable to tend to my ever-growing to-do lists. Trying to squeeze in sleep, work, eating well, working out, blogging, and not losing my sense of self along the way. Oy vey!

    I usually don't eat until around 7:30 or 8am at Alchemy but I woke up starving for some weird reason, so I had a brown rice cake with hummus before I left for work around 5:30am.

    Breakfast was a blueberry cacao smoothie bowl, per usual. I left out the date because I've been finding it sweet enough with the protein powder. I added more liquid and actually drank it in a Mason jar without toppings because I didn't have time to sit down. That also means I slurped it down before remembering to photograph it, so here's a picture of my bowl (with toppings) from Monday.

    Besides bites of toast and samples of smoothies, I didn't get to sit down and actually eat until a substantial lunch until around 4pm. First I ate a bowl of vegan tomato bisque that I made for our soup of the day that morning. So creamy. Thank you, cashews.

    Then I shoveled a big bowl of quinoa and kale salad in my face. Ahhh the beauty of having your own food ready for you at work! Dreamy.

    I snacked on an over-ripe peach on the way home from work.

    The highlight of my day was coming home to this beyond humbeliavable package from Vega! CAN YOU EVEN? I can't. Too kind.

    After Body Pump and a quick grocery trip, I chugged a shake made with a cup of almond milk, a scoop of Vega, some cinnamon, and a little chunk of frozen banana. I've been trying to get protein in within an hour of working out to help boost this gal's muscle mass! Heyyoooo.

    Dinner was leftover vegan cheesy broccoli casserole with leftover whole roasted brussels sprouts, zucchini, onions, and peppers (with a side of Argan oil shampoo, of course). I dipped everything in Hope Food's sriracha hummus.

    What a dream.

    While I wrote this post, I snacked on a vegan mocha muffin, which is a rendition of my vegan chocolate banana muffins. They're super tasty and I can't wait to share the recipe with you next week when things calm down a bit!

      Well for as busy as you are, you do a damn fine job at eating healthy!

      And that soup...holy schneikes does that look amazing. WANT. I'm excited to see that muffin recipe too!

      I hope you get some sleep and that life chills out for a minute so you can find time to just BREATHE. xo

      Lol ugh I am totally with you on the business and lack of sleep. But your food looks delish and healthy so kudos to you! Right now I use Quest protein but I am thinking of trying Vega! Any flavors you recommend? 🙂
