    What I Ate Wednesday: 03-11-2020

    Hello, friends!

    A lot has changed with Coronavirus since I originally wrote this post. We're definitely concerned about our wedding in two weeks with what's going on, but we're trying to make the best of it. I'm thinking of everyone around the world impacted in unimaginable ways by this virus.

    Onto the eats!

    Breakfast

    When I'm in a hurry and want something quick and easy, cereal has been my go-to. I mixed Engine 2 Rip’s Big Bowl with Toasted Wheatfuls then added some goji berries and cacao nibs.

    Lately I like to add a scoop of unflavored collagen to boost the protein a bit. (Just be sure to put it in the bowl first, then add the milk and whisk, then add the cereal.)

    Lunch

    Everything bagel sammies in the park! There's nothing like it. The Lox is my favorite local bagel shop.

    I usually get their beet cream cheese on a rosemary sea salt bagel, but when I went in they were featuring a new vegan cream cheese from Woodhouse Vegan with carrot "lox" so I gave that a whirl. I was super impressed with the cream cheese!

    Snack

    I grabbed a Blueberry Cacao smoothie from Alchemy with chocolate plant protein and spinach before finishing up work for the day.

    Dinner

    Whenever we don't want to spend a lot of time cooking but don't want to eat out again, we make this curry. Jeff is great at making it now so it's become such a staple! We make the brown rice in the instant pot, too.

    After dinner, we grabbed some Peanut Butter Chia Bites from the freezer to munch on while we sipped peppermint tea and watched the finale of The Outsider.

      So sorry you had to cancel Costa Rica 😔 Unfortunately a wise decision.

      Re: the comic-19... Are you stocking up on food? Or not? If you are - any tips?

        Thanks, Laura. Yes, we actually went to ALDI yesterday to buy a bunch of food and it was pretty wild how empty the aisles were. We're trying to stay healthy right now to boost immunity--lots of plants, water, staying active, etc. Stress is inflammatory so really trying to stay calm!
