I’ve been working like a madwoman trying to finalize web design, packaging, menus, and all the moving pieces in order to launch Alchemy Meal Prep in the next couple weeks. I can’t wait to show you all the site once it’s live!!

Breakfast
No better way to kickstart the day than with a fabulous bagel! Jeff doesn’t love bagels but I totally have a soft spot for them. I almost always go with everything, but The Lox Bagel Shop makes a meal sea salt and herb one that I can’t pass up.
That with their house-made beet cream cheese and smoked salmon is superb.
Typically in these posts I showcase a lot of homemade food because I cook during the week, but we eat out every Friday and Saturday evening and typically for lunch Saturday and brunch here and there as well!

Lunch
I made my Hearty Lentil Kale & Potato Soup in the Instant pot and it turned out amazing! I did 3/4 tsp each of the spices, swapped potatoes for frozen corn, and did more carrot and celery. I put everything in the Instant Pot (no sautéing) and did high pressure for 12 minutes then let it release naturally for 15 minutes.
Then I stirred in a couple spoonfuls of lemon juice and a bunch of greens. So good!
Snack
I’ve been obsessed with my blueberry cacao smoothie lately! So much so that I even made smoothie bags with frozen wild blueberries, frozen tart cherries, chocolate plant protein, avocado, cacao, and chia seeds. Toss everything in the Nutribullet with cashew mylk, top with cacao nibs, and I’m ready to go!
We recently got these amazing 17oz glasses for our everyday water cups but they’re amazing for smoothies, too. I love how they’re shorter and wider versus tall. They feel lightweight but they’re super sturdy!
Dinner
We made this Mediterranean Baked Fish with Tomatoes and Capers but with a bunch of changes. I used two cans of diced tomatoes, yellow onion, no lemon zest, dates instead of raisins, and added a can of chopped artichoke hearts. We served it with roasted potatoes and salad. Very tasty!
Dessert
We are so obsessed with the sour gummies and agave gummy bears in the bulk bins at Lucky Market. I highly recommend! It’s super weird because I’ve been craving chewy things versus chocolate and I’m normally team chocolate all day every day.
What are you all reading lately? I’m finishingThe Wife Between Us on Audible and I like it but don’t loooove it (although I still have an hour and a half left).

Hey Carrie! I have lots of fun dessert recipes, the flourless pb zucchini brownies are a great one. I don’t calculate calories but rather focus on on nourishing beautiful food and plenty of balance 🙂
