Hiya, friends! How is everyone's week? I just finished The Way It Always Is and I can't recommend it enough. Such a heart-warming book! Next up is Wild Game, which my sister read in her book club and raved about.
Breakfast
I'm still on a heck of a bagel kick. Alvarado street sprouted sesame bagel with one side cream cheese (loving Kite Hill's everything cream cheese) and one side avocado. Fried egg on the side for dipping!
Lunch
You MUST make my Instant Pot Cream of Mushroom and Wild Rice Soup. It's so amazing! I paired it with Brussels Sprout and Kale Caesar Salad with veggies from our Yellowbird CSA that I'll be posting Monday. It would make a fab side dish for Thanksgiving, might I add.

Snack
Snackage was a couple walnut brownie bars I made over the weekend. First I blended in the food processor 1 cup soft pitted dates with 1 cup walnuts and Β½ cup almonds. Then I added 1 tsp vanilla, 5 tbsp cacao powder, a big pinch of kosher salt, and 2 tbsp almond milk. Blend until it forms a nice dough.
Press mixture into a 3-cup rectangular Pyrex lined with Parchment paper and freeze. Slice into bars and devour! I keep them in the freezer and take them on the go in a reusable Stasher bag.
Dinner
Taco night! I've has been slowly but surely teaching Jeff all my favorite Hummusapien recipes (he made my pancakes last weekend, too!). He killed it with taco night.
SautΓ© diced onion, bell pepper, zucchini, mushrooms, and tomato in olive oil for 10 minutes. We love to bulk up our chickpea "meat" with veggies.
Then add two cans of chickpeas, half a cup of toasted chopped walnuts, tons of taco seasoning, salt, and pepper. Then add water to get the right consistency. Basically this recipe but with lots of veggies! It makes a lot.
Served in tortillas with cabbage, guac (three avocados, about Β½ cup chopped onion, a big splash of lime juice, big pinch of kosher salt, and sprinkle of coriander), salsa, and blue corn chips.
Dessert
Amazing vegan and gluten-free ginger molasses cookies coming your way soon! They're SO good. Numi chai tea with almond milk on the side!
