Hi friends!
Life has been no shortage of busy over here with overseeing the restaurants, getting Alchemy Meal Prep up and running, and wedding planning. It’s been hectic but so darn exciting at the same time!
Onto the good eats.
Breakfast
Bagels at The Lox! I’m in love with the rosemary sea salt bagel with beet cream cheese. Seriously SO good. We added avocado and tomato, too. Divine!
Lunch
I made this Instant Pot Lentil Soup Sunday when I didn’t have much on hand but wanted something for lunches. I used what was left of a bag of frozen corn, green beans, and carrots since I didn’t have fresh carrots.
I ended up adding more water, salt, and some balsamic vinegar but it turned out great.
I also made tuna for us with two cans of Wild Planet tuna from Costco, lots of sauerkraut, chopped onion, celery, and bell pepper, Dijon, red wine vinegar, olive oil, a spoonful of mayo, salt, garlic powder, dried dill, and lots of pepper.

Snack
I squished my Peanut Butter Oatmeal Bites into a pan and covered them with melted chocolate. Mmmmm!
Dinner
I ended up having to work all weekend at the store so Jeff made dinner. Bless him!
He’s a pro at making Hummusapien recipes now. He whipped up bean balls with whole wheat rotini, leftover spaghetti squash, and Kirkland marinara.
We made garlic bread using ALDI’s sourdough, butter, garlic power, nutritional yeast, and salt. One of my favorite comfort meals.
Dessert
For dessert we made a little “treat bowl” as we call it with an almond flour chocolate chip cookie and a pumpkin muffin.

Hhhm I haven’t had tuna in such a long time. It just shows how quickly we can get stuck eating the same old things every day. I need my regular pops onto your site to remind me to add a little variety to my daily diet. I’d be way too boring in the food department without it.

I tried this tuna salad mixture the other day inspired by another recent WIAW post. I was super skeptical of tuna + kraut but since I love kraut I gave it a try. I liked it and it was even better the 2nd day after it sat overnight. Thanks for the inspiring ideas. I make nearly 100% of our food, so I really rely on help like this!
