    What I Ate Wednesday

    You guys! I hereby declare that I kind of sort of fell off the healthy bandwagon and I'm officially getting back on.

    I'm sick of not cooking. It makes me feel yucky inside. It gives me the heeby jeebies. I've come to the decision that I need to make more time for it---the kind of time I used to devote to my kitchen love affair.

    We all get in ruts. Whether it's cooking, exercising, spending money, whatever! But guess what friends? It's never too late to find your best self. So get off the couch and make chickpea salad or something!!

    Kidding. Only kind of.

    So basically I'm trying to eat simple, clean, and plant-based. Per usual. Starting with a smoothie! This was my usual blend of frozen blueberries, raw cacao, a couple dates, brown rice protein, stevia, tons of spinach, and almond milk. I'm still obsessed with these mason jar lids and straws!     I had to try the side salad at Alchemy. All the beans, all the time.

    Lunch was a hugh jass salad with chopped romaine, bell pepper, carrots, avocado, roasted asparagus, roasted tomatoes, and a delish shallot dressing from Detoxinista's lovely new cookbook, Everyday Detox. I pretty much never pack salads for lunch so I was pretty proud of this baby.

    I also had a blood orange iced tea from my fave coffee shop (Stauf's German Village) and some delish cherries + freshly ground sunbutter from my favorite Whole Foods bud! Get excited for some Whole Foods fabulousness coming your way. You may just see a Hummusapien nut butter in the near future...

    Before I left for Body Pump I snacked on a brown rice cake with more sunbutter.

    I had late dinner plans with a friend and was starving in the mean time, so I stuffed my face with some unpictured roasted brussels sprouts and hummus. With hot sauce. Obviously.

    Dinner was Chipotle! My go-to is a salad (hold the dressing) with brown rice, black beans, fajita veggies, corn, tomato salsa, guac, and lettuce. Bring on the veg.

    Chipotle always brings out my sweet toot and I've been obsessing over my cinnamon raisin no-bake bites lately. This time I pressed the dough into a loaf pan lined with parchment paper to make bars rather than rolling them into balls. Delish straight from the freezer!

      A Hummusapien nut butter!? OMG that is amazing!
      I have kind of not been my most healthiest self the last few weeks either so I am with you on re-focusing on those badly nutrients and moving my arse more! I have never had sun butter before, I guess this needs to change...

      I get the same salad from Chipotle (extra pico, extra lettuce, mucho hot sauce), and I always have a MOUNTAIN of a salad! It's pretty amazing! 😉

      I have a hard time believing you were eating unhealthy but if you say so...;)

      You did an awesome job getting back in track though- everything looks delicious! I need to get my hands on that cookbook too. It sounds like a winnah!
