    What I Ate Wednesday

    Today's eats are from Monday when Jeff and I had a lazier start to the day before I headed to the restaurants.

    Breakfast

    We laid on the couch and snacked on pumpkin gingerbread and coffee, which felt so lovely and cozy and fall-ish! I have an awesome new pumpkin bread recipe coming for you soon!

    I was craving a Fox in the Snow egg sandwich but wanted to make breakfast at home so we made our own version! Jeff cooked up some bacon and scrambled eggs while I toasted sourdough (I had a loaf in the freezer from ALDI) and mixed together mayo, sriracha, and dijon for the sauce.

    After the bread was all toasted and sauced up, we topped it with eggs and a thinly sliced cheddar. I put the halves in the oven until the cheese melted then finished them with arugula and the other piece of sauced bread. They were so divine and it was nice to have something different than our usual shakshuka and pancakes!

    We had strawberries and local blackberries on the side.

    Lunch

    Lunch was leftover golden lentil soup that I made over the weekend to have for lunches. The perfect ode to fall around the corner!

    Snackage included these heavenly almond butter covered almonds.

    Dinner

    Jeff made my enchiladas for dinner while I got some work done. We paired it with this amazing guac (a pinch or coriander is key!), blue corn tortilla chips for crunch, and a simple salad with apple cider vinegar dressing to go with them!

    In other news, Derk's Works is shooting our engagement photos Thursday and I'm so excited. I just got these insanely comfy nude heels (40% off) or these white booties that I think I'm going to wear with a white flowery dress!

    If you're shopping for fall/winter boots yet, the most comfy black Frye boots are 57% off. I bought them two years ago and wear them all the time! The black over-the knee boots are another rare find!

    In other news, I've been using this facial oil to wash my face for over two months now and my face has never been softer. I got a few soft washcloths from Target that I use to wipe down my face afterwards.
