    What I Ate Wednesday

    Hey, pals!

    I'm currently exploring farms and such in Monterey on a dietitian media tour about produce safety. I can't wait to tell you all about it! In the mean time, let's dive in to some good eats from last week.

    Breakfast

    We got tomatillos in our CSA last week and I went rogue and made salsa! I just googled tomatillo salsa and used that as a guide, tasting after I blended. It turned out DELISH and has been pretty stellar atop eggs.

    I was pretty proud because I've never made salsa before. Whole wheat English muffin with avocado and plenty of coffee on the side!

    Lunch

    I've been at our Grandview store most days and our Power Stir Fry is my favorite, so I enjoyed that with grilled salmon for lunch. It's loaded with purple cabbage, stir fried ancient grains and veggies, kimchi, marinated cucumbers, avocado, cashews and peanut sauce.

    Fun fact: the peanut sauce we use is from this recipe! I love a nice filling lunch so I'm not thinking about food again an hour later. Ain't got time for that!

    Dinner

    Frozen pizza night! Jeff and I have frozen pizza and salad once a week or so. I always keep some in the freezer when we don't feel like cooking. It's a good reminder that not every meal has to be super creative or fancy. We like Newman's Own the best!

    Dessert

    We shared some of this berry crisp with vanilla ice cream. Fab!

      Oooh might just have to get that stir fry when I'm in Columbus :p
      Also, if you're feeling like trying something new and trendy ahaha, I'm obsessed with TJ's cauliflower crust cheese pizza. I usually add a shiz ton of my own toppings but its also delish on its own!

      That power stir fry bowl looks amazing! And making homemade salsa is so gratifying - it's fun too play around the recipe and really impress yourself. Always fresher and more flavorful than the jarred stuff although I always have a jar of Frontera in the fridge 😉

      Matt and I have been enjoying frozen pizza about once a week too, and we love it! I enjoy trying different brands and combos, and I continue to look for delish GF choices for Matt that won't break the bank. I'm loving following your visit to CA!
