Hiya, pals!
We went to the lake this weekend with friends and it was magical and relaxing. I brought this strata for breakfast plus a big fruit salad. It was a hit!
Breakfast
A little Fox in the Snow action! We shared an egg sandwich with extra arugula (my fave) and a sticky bun sent straight from heaven. Oh, and coffee on repeat!
Lunch
I made this Crunchy Thai Peanut Quinoa Salad because I had everything on hand (even cooked quinoa!). I freaking love anything peanut butter related so this was delish and craveable for lunch.
Speaking of peanut butter, I made this insane No-Bake Peanut Butter Cup Pie for a friend’s new baby and holy moly, it was insane!
Snack
Cherry berry smoothie snack! This lovely blend had frozen cherries, blueberries, strawberries, and bananas with almond milk, spinach, my fave chocolate plant protein, and you guessed it…peanut butter.
Can’t get enough of my Fluffy Lemon Blueberry Muffins. I added a couple teaspoons of lemon extract because I wanted some serious lemon flavor. They delivered!
Dinner
We marinated defrosted from frozen wild tuna steaks from ALDI (so affordable!) in soy sauce, sesame oil, sriracha, lime juice, black pepper, and fresh ginger.
Jeff grilled it along with baby eggplant from our CSA, peppers, and asparagus in avocado oil, balsamic vinegar, salt, garlic, and pepper.
I also cooked up a bunch of potatoes in a big cast iron and then roasted them in the oven for about 40 minutes until they were golden and crispy. I wish grilling season could be every season!

While it’s definitely not the same as a real grill, I highly recommend a grill pan to extend grilling season to every season 🙂

Hi, thanks for a day of wonderful eats. I just had–as someone who is grappling with the idea of intuitive eating–a couple questions. Usually at dinner, I go back for a couple servings of stuff. Do you have a one plate rule or if you’re still hungry, can you go back for some potatoes or even veggies?
I also have another q, if you don’t mind. I feel like my satisfaction cues aren’t aligned with my hunger. Like, I’ll eat a nourishing, satisfying meal, but want another serving even though I’m full. How would you deal with this? Thanks so much for your inspiring content
Thanks, Alex! And yes, I more often than not go back for seconds! After all, it’s impossible to know exactly how much food our body will need when we’re making a plate. Sometimes I go back for seconds, sometimes I’m full before finishing my plate…changes all the time. I definitely don’t have a one plate rule as that would go against using my internal hunger and fullness cues. If you’re wanting more food after you’re full, I’d ask yourself if you’re really eating what you’re in the mood for versus eating what you “should” eat so you’re actually satisfied. You can eat a huge salad and feel super full but still not satisfied, if that makes sense. And yes, sometimes food is super yummy and it’s normal to at times eat past fullness cues because life happens 🙂
