Good morning, friends! What’s new in life? Things are crazy over here per usual trying to plan our wedding, get cocktails rolling at Alchemy Kitchen, and keep my head on straight. Thank God for cookies.
Eggs and toast and oatmeal were all feeling kind of meh. I’ve really been craving variety! I switched up breakfast to a yogurt bowl and it did not disappoint. This one was local Snowville plain 2% yogurt with vanilla and cinnamon stirred in, a sliced plum, cereal for crunch, and plenty of almond butter for staying power.
I was hungry again by the time I left the house so I snagged a hard boiled egg on my way out the door. It’s worth noting that old me would’ve demonized that hunger and made myself wait till lunchtime versus honoring my hunger cues.
I also had coffee with some CBD oil mixed in. I’ve been taking CBD in either capsule or oil form every morning and I like how it curbs the jitteriness caffeine can sometimes give me. As a reminder, it takes two weeks to reactivate the endocannabinoid system and really feel the effects of CBD.
I used up a bunch of veggies from our CSA to make a Greek-style chickpea salad with cucumbers, tomatoes, red onion, kalamata olives, lemon juice, EVOO, basil, mint, oregano, salt, pepper, and garlic. Delish!
I made homemade hummus for the first time in foreverrrrr. I used this recipe and ended up having to add more chickpeas after boiling them. Good thing recipes are meant to be a guide! I also added more garlic. It’s so creamy and loaded with tahini, just how I like it. I may not be able to go back to store-bought…
I ate it all together with leftover roasted sweet potatoes, peppers, and asparagus smooshed with hummus. YUM!
Snackage included a zucchini chocolate chip muffin, a no-bake bite, and all the fresh cherries.
We had a ton of wild cod in the freezer and I wanted to do something different with it so we made a dish with tons of herbs, tomatoes, peppers, and onion. It was good but I wasn’t in love with it. It happens!
We had roasted fingerling potatoes, local corn, and salad on the side. So summery.
I’ve decided that I way prefer fattier/more flavorful fish like salmon or tuna. This is my favorite cod recipe!
