Hiya pals! Happy hump day.
And happy mid-July! I can’t believe I’m even saying that. Can I just say that I have a new Mochi obsession? More on that later.

Breakfast
Jeff made a batch of overnight steel-cut oatmeal (I think he missed it after our cereal obsession) so I loaded a bowl for myself with plenty of almond butter, berries, and mulberries.
Mulberries have a nice crunchy texture and sweet flavor. They’re also super high in antioxidants and vitamin C!
Lunch
Basil Portobello sammie from Alchemy! Old me would’ve gotten a salad because that much bread was scary. Then I would’ve wanted to snack on something carby and crunchy like an hour later.
I’d think about food all afternoon and snack on a million things because I didn’t order what I really was craving in the first place. No longer. Majorly satisfying!
Snack
A yummy blueberry muffin! I used this recipe which I adore but used applesauce instead of banana, more dates to make up for no banana, no cacao, and added more flax and oats to get the right texture. Plus plenty of blueberries!
I make something snacky like muffins and/or bites every weekend for us to grab for before workouts or snacking. I made bites this week with oats, honey, peanut butter, flax, salt, and chocolate chips similar to these. Divine!
When I got home I made a little salad with a local tomato, balsamic vinegar, EVOO, kosher salt, and basil to munch on while I made dinner. Such a treat in the summer.
Dinner
I made a double batch of salmon burgers, sweet potato fries (the frozen Simple Truth ones from Kroger are my go-to), and sautéed broccoli. We also had salad with red wine vinaigrette stored in my new favorite dressing shaker bottle!
Dessert
Mochi! Found it at Target and I just adore it. Also from Target are the softest ever PJs I’m wearing in the above pic. I legit have 2 pairs, two long sleeve and two short sleeve.
In fashion news, I’m loving this leopard maxi skirt, this jumpsuit, these slides, and these perfect black shorts. Have a delish week and BE GRATEFUL!

Hoowww is it mid-July?! I need this summer to pump the brakes a bit. But it has been such a stellar one so far, and I know the same for you because of this exciting time in your and Jeff’s lives! I had to break out a snack to read this post because I knew I would be hungry. Haha. The oatmeal looks so dreamy and satisfying, and I love what you wrote about the sandwich! That would’ve been old me too, but no more! Gotta enjoy what our bodies are craving and need. I love making snacks too (and your recipes never fail me!), so I need to make one this weekend! Love the fashion inspiration!
