    What I Ate Wednesday

    Published Jun 19, 2019 · Modified Jun 21, 2019 · by Alexis Joseph · 6 Comments

Eeeeek! Welcome to my new site, friends!

You all know this has been in the works for several months so I'm hella excited to see my vision for this space finally come to life. Thanks for bearing with me as we work through a few kinks around here!

    Breakfast

In food news, I've been craving smoothies and cereal for breakfast like no other.

This blend was about a cup of frozen bloobs, two juicy dates, a bunch of frozen spinach, a spoonful of cacao, flax, avocado, vanilla extract, and enough almond milk to blend. I topped it with Heritage Flakes, Grape Nuts, and almond butter.

Super satisfying and kept me full for a while so I could focus on work!

    Lunch

For lunch I chowed down on leftover pasta with marinara, capers, artichokes, greens, and tuna (parked in a spot, not driving!). This is a go to dinner for us when I don't want to spend a long time in the kitchen but am craving something simple, flavorful and comforting.

Taking leftovers has been the easiest thing to grab lately!

    Dinner

I forgot how much I love these enchiladas. (I ended up eating a third after this plate.) Jeff actually made them and they turned out fabulous!

All the more proof that he's fully capable of cooking Hummusapien recipes for dinner. Salad with balsamic dressing and blue corn tortilla chips with salsa on the side.

    Snacks

I snagged a 20-pack of chocolate peanut butter bars from Costco to grab when I'm in hurry because let's be honest, I'm a sucker for anything peanut butter and chocolate.

    Dessert

Trader Joe's chocolate covered pretzels...I can't. We've also been loving fresh berries with coco whip as a post dinner sweet treat.

    Style Inspo

In fashionista news, I'm loving these nude wedges, striped jumpsuit, front tie jumpsuit, tropical leaf jumpsuit, beach bag, slingback sandals, white summer dress, and pink cutout dress,

Also they have a couple sizes left of my favorite bootie in brown! Off to watch Big Little Lies. Have the best week!

I love the sleek design, but the ads are awful. It takes forever to load and there are so many videos/pop-ups.

Thanks for the feedback, Emily. I've been dealing for weeks with some wonky stuff on the back end that were negatively impacting speed so I appreciate your patience. Would love to hear if it's loading more quickly for you today. I'm working on reducing the number of ads as well.

LOVE your site! All of your food looks incredible, especially the pasta and enchilada! Your pasta inspired me to make this combo soon. We have nearly all the ingredients. The tropical leaf jumpsuit is adorable!! Thank you for sharing!
