    What I Ate Wednesday

    TOAST TOAST TOAST TOAST.

    This strawberry coconut avocado toast is just about everything. No words can capture its fabulousness. You'll be seeing it on Alchemy's menu next week! EEEEEEEk!

    I've been taking a  little break from smoothies. Lately I've actually been loving chickpea flour breakfast pizzas (I add a tablespoon of nutritional yeast to the batter), toast, and this delish almond joy overnight smoothie blended with frozen banana and topped with sliced banana and cacao nibs for crunch factor.

    Lunch was a big bowl of Mexican chickpea soup from Alchemy. Say hello to a day full of eats of which 99% are from my lovely place of work. Can't complain that there are healthy options evvvvverywhere!

    An hour or so later I noshed on a kale and quinoa salad with pesto. I was glad to get some veggies in since I've been majorly craving carbs of all sorts lately. I drizzled it with pesto. Game changer.

    While my roomie worked on writing our new menu boards, I treated her to one of our new acai bowls, the cherry cheesecake. I had a bite or seven.

    HEAVEN ON EARTH.

    Sometime in the afternoon I dove into some Oasis roasted garlic hummus with Mary's Gone Crackers...

    ...and a nomtastical paleo banana muffin. I use coconut oil instead of butter and bake them in a muffin tin!

    Dinner was an Amy's burrito with hummus and hot sauce shoved into my face in five minutes because I had to stay work till 9:30pm.

    When I finally got home, I snacked on some strawberries with a tiramisu no-bake bite made with Skoop brown rice protein followed by lots of almond milk straight from the carton. My love Arman can do no wrong!!

      Those Paleo banana muffins are a STAPLE in our apartment- I stumbled upon them when my boyfriend was eating strictly paleo and even though he's pretty much eating anything these days, they're still the only ones I make!

      Hi Alexis, I often end my day with a few swigs of almond milk (or soy milk) straight from the carton. And look at you and your hummus. You are true to your name, because hummus always makes it in your eating recaps! I think I'm the only one in the world who hasn't had an Amy's Burrito. Am I missing out? Happy WIAW! 🙂

      I love that sound of that strawberry avocado toast! Yummo.
      And you're so lucky to work somewhere with such healthy food! The best option for me is Chipotle and that's pretty much it. Not that I don't love Chipotle but it's no Alchemy. 😉
