    Hiya, pals!

    I've been working on redesigning my website since December and I'm happy to report that it's juuuust about done. I can't wait to hear what you think! Hummusapien turns 8 years old this summer so it was due time for a facelift.

    Breakfast

    Fluffy whole wheat blueberry pancakes on repeat! I did all almond milk instead of OJ and no orange zest since we didn't have oranges. If you like sweeter pancakes, you can add a tablespoon of sugar or maple syrup to the recipe. Jeff and I like to do maple syrup on the side for dipping. I added a few fresh blueberries right before flipping!

    Lately, we've been making scrambled eggs with freshly grated parmesan (I always keep a wedge on hand) mixed it at the end plus micro greens on top for a little savory action on the side.

    Lunch

    If you live in Columbus and like Northstar, the Mexicali Salad with grilled corn, peppers, smoked gouda, tomato, herbs, biscuit croutons, and creamy cilantro lime dressing is a must. It's so insanely flavorful and may just be my new favorite summer salad! I get it with tofu instead of chicken.

    Snack

    I made a smoothie snack in the afternoon with half a cup each of frozen blueberries and strawberries, a huge handful of frozen spinach (so good for thickness!), a spoonful of peanut butter, a scoop of chocolate protein, and almond milk. Very refreshing.

    Dinner

    For dinner, I defrosted a few pieces of Costco's frozen wild salmon and roasted asparagus + potatoes with rosemary and sautéed cremini mushrooms from our CSA in olive oil with salt. I seasoned the salmon liberally with kosher salt and pepper and cooked it on the stove in oil while the veggies roasted.

    I also made this Spanish "rice" made from chickpeas and lentils that I got as a sample a few weeks ago. I was skeptical but it was actually really tasty and shockingly simple to make. All you do is boil water, pour in the rice, and cover the pot off the heat for 12 minutes. All passive! I went back for seconds on the rice.

    In other news, if you haven't tried Bubbies Pickles, they're the best ever. We enjoyed them all the time growing up and now I buy them for us every week. Also how amazing is this indoor/outdoor rug? It made our deck so cozy!

    Dessert

    I made a batch of these chocolate muffins (so easy and delish) and enjoyed one with Breyer's vanilla ice cream for dessert but forgot to get a picture so enjoy these fabulous sour gummy worms that Jeff gets in the bulk bins at Lucky Market instead.

      I appreciate seeing what you eat. I get some great ideas i.e. the scrambled eggs with parmesan and I see the portion sizes. I really like this weekly post.
