    What I Ate Wednesday

    Published Apr 24, 2019 · Modified Mar 13, 2022 · by Alexis Joseph · 20 Comments

Hiya, beautiful souls! I shared an Instagram post about "fun foods" yesterday and so many of you resonated with it. Made my heart melt.

In other news, Jeff started a new work schedule which inherently has led to me adjusting mine because to be honest, eating dinner together while we watch Queer Eye is pretty much my favorite part of the day.

My eating patterns have been a bit different since I'm eating dinner at 9:30pm some nights, but we were often eating around 8:30pm with our old schedules anyway so it's actually not that weird.

We've been going to bed closer to 11pm and getting up around 7am versus the old 10pm and 6am routine. I won't wait to eat dinner every night but I'm surprised and relieved at how easy the adjustment has been so far!

    Breakfast

Lately I'm waking up around 7am, getting coffee and grabbing a muffin to snack on while I blog as a mini breakfast. I made these pumpkin ones with walnuts using leftover oatmeal and I'm obsessed. Jeff leaves for the gym and I work until he gets back.

We're trying to either go on a walk or eat our "real" breakfast together around 9:30am. Yesterday I didn't end up eating till 10:30, and shifting everything back definitely made eating later easier.

I'm back on the oatmeal train! I've been craving my steel cut oatmeal topped with blackberries and almond butter plus coffee on the side.

    Lunch

Lunchy snack plate! I got organic hard boiled eggs at Costco which have been super nice to have on hand. I made my beet, green bean, and cannellini bean salad to have for lunches because it comes together in minutes and tastes amazing. I used shallot instead of green onion and slivered almonds instead of walnuts. Use whatever you have!

I've been trying to up my veggie intake and having sliced carrots and celery ready to go (plus my delish balsamic for dipping) has been really great. I keep them in water to help with crispness. I also had a Bubbies' pickle, pineapple, and another egg after I finished this plate.

    Snacks

I meet with our Alchemy store managers weekly and this week we enjoyed Jeni's while we chatted. I got Lemon & Blueberries Parfait and Brambleberry Crisp.

Old me would've felt a bit anxious about mid day ice cream (it's not "desert time" nor the weekend) but let me tell you, the feeling of peace while eating ice cream on a sunny day at 3pm was liberating and unparalleled.

I did a circuit workout at the gym around 7pm (it should say side and front raises, not lateral raises) and I'm posting it below in case anyone is in a rut! My current favorite songs are Across the Room and Line of Sight by Odesza.

Afterwards I came home wanting a snack. I got out all the veggies I'd chopped plus some snap peas and ate them with ALDI's pineapple poblano guacamole. Having dips on hand makes veggies so much more fun!

    Dinner

We had my Thai quinoa fried rice the night before and had leftovers but what I was really craving was the lobster ravioli I picked up at Costco last week. It only boils for 4 minutes so it's amazing to have on hand when you don't feel like cooking, and that's how I felt last night at 9pm!

We drizzled it with olive oil and topped with freshly grated parmesan. I get a wedge at a time at ALDI and it lasts forever tightly wrapped in the fridge.

I snagged a bag of butter lettuce at Trader Joe's along with Persian cucumbers so we had that with my balsamic on the side.

And even though I'd had plenty of sugar earlier in the day, I really wanted some dark chocolate covered pretzel thins. So I had some. And that was that. Veggies, ice cream, ravioli...they all fit!

Speaking of sugar, how amazing is this?

    Style

Lucky is having a site-wide 40% off sale! I'm loving this skirt, these denim shorts (and these distressed ones), bold stripe wrap dress, button up tie front shirt, and high waisted white jeans, graphic tee, and dot top.

Also into these adorable woven sandals (I want them in every color!), these rose gold slides (or these), v neck blouse, these and these sunglasses, and these brown slides.

    Have a fab week!

I haven't experienced any trouble with printing the recipes. Often I just save the tab to revisit later or take a screenshot of the recipe. I think her site is very worth it, but to each his or her own.

I love how much you promote freedom in the sense of not only the foods we eat, but the time of day we consume them. It is something I am still working on, and this post def motivated me to treat myself randomly more often!!
