In other news, as I’m writing this it’s 9:04pm and I’m chowing down on a brownie and rocking my special glasses to block the blue light so your girl can sleep at night. God bless whoever invented those!
I was craving savory so I warmed up leftover overnight steel cut oatmeal and topped it with a fried pasture-raised egg, Trader Joe’s green dragon sauce, avocado, salt and pepper. Hit the spot!
I didn’t get to eat lunch till 2pm so I snacked on one of these peanut butter muffins in the car.
I had a hankering for Mexican so I opted for a Chipotle bowl with brown rice, black beans, fajita veggies, tomatoes, corn, guacamole, lettuce, and plenty of Chipotle tabasco with blue corn tortilla chips for dipping. The guac was not as green as usual which was a big bummer because I love Chipotle’s guac.
Later on I took a trip to Costco so I thought it would be fun to show you what a typical cart looks like! Other go-to’s not pictured below that we already had on hand include extra virgin olive oil, Saigon cinnamon, garlic powder, pepper, cumin, oregano (I buy bulk of our most used spices), balsamic vinegar, organic eggs, coconut oil, vanilla extract, canned black beans and chickpeas, medjool dates, sweet potatoes, walnuts, quinoa, pasta, hemp seeds, chia seeds, flax seeds. I store all the nuts and seeds in the fridge.
We get lots of non-food items like paper towels, toilet paper, natural laundry detergent, contact solution, makeup remover wipes, eco-friendly dish soap, and trash bags too.
I headed to a nice and sweaty 30-minute GRIIT strength class at 5:15pm. I came home super hungry so I snacked on a Siggi’s raspberry yogurt with blueberries while I cooked dinner. So thick and creamy!
These bean balls are always a favorite. I used oats instead of breadcrumbs and always double the recipe so we have plenty of leftovers. We enjoyed them on top of spaghetti squash and penne pasta smothered in my favorite Kirkland marinara from Costco plus nooch.
I also made garlic bread (buttered bread with nooch, salt, and garlic powder broiled on both sides till golden) plus Trader Joe’s butter lettuce salad mix with balsamic dressing. I made the dressing with four prunes instead of maple syrup and it was so thick and creamy! I had to add more water but we loved the velvety smoothness.
Currently loving this watermelon top, white skinny jeans (I have these high-rise these jeans in black and white and they’re perfection) floral button blouse (bought this yesterday!), this insanely cute black bag, high rise black shorts, button front cami, black cut out skirt (also love the denim version), v neck blouse, espadrille sandals, and collapsible back flats.
