Good morning, brave people of the world!
I woke up to a lovely blanket of snow warming the earth and it’s really peaceful writing this post and sipping coffee while the snow falls. Breakfast yesterday was Overnight Steel Cut Oatmeal because I was weirdly craving fresh blueberries. I used a sample pack of this vanilla almond butter which dare I say is the best in all the land!
For lunch I had a hankering for a sandwich so I made the Basil Portobello at Alchemy with roasted mushrooms, red onion, roasted red peppers, arugula, and herbed cashew cream on fluffy local ciabatta bread. I dipped it in our tomato bisque and it was fabulous.
Later in the afternoon I snacked on a coconut milk yogurt (I usually don’t like them but this brand was pretty good!) with granola from my Yellowbird CSA box and more bloobs.
For dinner I made an epic Shrimp Vegetable Curry with Herbed Cauliflower Rice served with garlic naan that’s getting posted next week! It’s hand down the best curry I’ve ever made and I cannot wait for you all to get your hands on it. Hold tight! We also had salad with carrot and red wine vinaigrette (my balsamic vinaigrette recipe but sub red wine vinegar, double the maple syrup, add a bit more Dijon, and add a teaspoon of oregano).
I’ve been making this honeybush or rooibos chai tea with almond milk at night because it’s so yummy and calming. For dessert we had leftover banana bread which I had made over the weekend when a friend with celiac came over for breakfast. It’s made with all almond flour (I buy it at Costco, best price ever) and it tasted AMAZING! Perfect texture and so moist. I would add chocolate chips next time.
