How’s it going, mates? Freezing your tushy off like us Ohioans?
I just can’t with the high of 2 degrees today. Hoping I can get away with never leaving my cozy slippers and piping hot tea on repeat for the rest of the week!
Breakfast was my Overnight Steel Cut Oatmeal made in the Instant Pot per my girl Megan! It was really nice to be able to press a button, walk away, and have them done the night before. I used 4 cups water and 1 cup almond milk but I had to add at least another full cup of liquid the next day so next time I’d do 4 cups water, 2 cups almond milk, and a pinch of salt. I topped the oats with admittedly unseasonal strawberries, sunflower seed butter, coconut sugar, and a pinch of kosher salt. Deeelish!
I haven’t been making anything fun ahead of time for lunches mostly because I’ve been around the restaurants during lunch time. I’m in love with our new Power Stir Fry at Alchemy Grandview with ancient grains, charred pineapple and veggies, kimchi, red cabbage, cucumber salad, avocado, cashews, and peanut sauce. It’s veggie heaven and SO satisfying!
I headed home mid afternoon to catch up on some work and had a hankering for something crunchy. I grabbed some Simple Mills’ crackers that I got at Costco yesterday and dipped them in sunflower seed butter (I’m obsessed) with Montmorency tart dried cherries on top. Weird but very yummy combo! I also had a mug of Numi rooibos chai tea with almond milk to warm up.
On my way to the gym I munched on a banana oatmeal cup that I made on Sunday. I took my old recipe for Chocolate Peanut Butter Oatmeal Cups, left out the protein powder and cacao, and added a good amount of almond extract, Saigon cinnamon, and cardamom. They came out so tasty!
Dinner was my Creamy Vegetable Chickpea Curry except I only had fresh celery, zucchini, and onion so I added frozen bell peppers, peas, and edamame. We had it with brown rice cooked in the instant pot (googled it and it turned out great) plus salad with my balsamic dressing.
I got so excited when I realized I had leftover Chocolate Peppermint Pie in the freezer. That + coco whip is all I need in life right now. Stay warm today, friends!
