most incredible NYE dinner at The Market!
In case you missed it, be sure to check out the Top 10 Recipes of 2018. In other news, Jeff cleaned out our refrigerator, freezer, and pantry last weekend and discovered so many goodies to use up. I’ve put the breaks on buying new food until we use up or throw away (hi, pesto cubes from 4 months ago) what we have on hand. It’s crazy the chili and pasta dishes you can whip up with a well stocked pantry.
For example, I had no fresh produce but had previously frozen leftover diced onion. I also had a bag of frozen sliced bell peppers, so chili was totally doable. I always keep pasta on hand as well for quick dinners. Combined with jarred tomato sauce, tuna, capers, artichoke hearts, and frozen spinach, you’ve got a healthy and cheap meal in minutes.
Breakfast was my favorite fluffy pancakes made with a full teaspoon of cinnamon and diced Asian pear from our CSA box topped with maple syrup and little peanut butter post photo. We usually make eggs to share on the weekend too and lately we’ve been adding Sartori parmesan. It makes the most luscious scrambled eggs! Speaking of eggs, I saw that there’s a new/more affordable Simple Truth brand of pasture raised eggs at Kroger which I think it super cool.
Lunch was Creamy Vegan Wild Rice Mushroom Soup which was FANTASTIC. (This Corn and Wild Rice Chowder is another hearty winter favorite.) I added more veg broth to make it go a little farther because Jeff’s serving is like a trough and we and I were both huge fans! I had a big bowl with Whole Food’s toasted whole wheat sourdough (I buy it from the bakery section and slice it in their slicer) topped with avocado, everything bagel spice, and caraway kraut plus some blackberries.
Snackage included a gala apple with sunflower seed butter.
Dinner was Banza chickpea rotini pasta with Kirkland marinara, a can of diced tomatoes, frozen spinach, capers, marinated artichoke hearts, a sprinkle of parm, and a can of tuna all warmed together. Delish!
For dessert we dove into our stash of my epic banana bread made into muffins. Definitely making them with blueberries next time!
In other news, I love sipping tea after dinner (Numi rooibos chai is the bomb) and I FINALLY ordered a pretty teapot. Before I’d just been heating water in a regular pot. I can’t wait for it to come in the mail! I also buckled down and got a Yeti tumbler after falling hard for the mug version and I gotta say, I love that it fits in the cup holder for when I’m running out the door.
