    What I Ate Wednesday

    Hello fine hummisses and hummisters of the world!

    Simi made me the yummiest breakfast earlier this week. She basically slathered tahini and raw honey on avocado toast and the flavor combination was simply fantabulous. I put pink salt on mine too because when does a pinch of salt not make things ten times better? I had scrambled eggs and bottomless coffee with almond milk on the side. Speaking of java, Costco has the best price on organic coffee beans (under $12 for 2 pounds)! I grind a batch at a time in my Nutribullet.

    Lunch was leftover Butternut Squash Pasta made with Trader Joe's brown rice penne which has a texture I just love. I got a 32-oz package of pre-cut butternut squash at Costco and used the whole thing for this recipe so it came together super easily. I didn't even bake it!

    I snacked on a couple things around TRISM in the afternoon, including some strawberries and few bites of a baked donut.

    I was pretty hangry after Body Pump so I was extra happy that I had leftovers ready for dinner. I made a huge stir fry with every veggie on the planet (onion, garlic, carrots, peas, edamame, bell pepper, collard greens, and a bag of Trader Joe's cauliflower rice all sautéed in avocado oil) and seasoned it with plenty of tamari, peanut butter, ginger powder, a little maple, and lime juice. I got wild shrimp at TJ's as well which I drizzled in oil, seasoned, and baked at 400F for 8 minutes. I served the veggie mix and shrimp over quinoa and it was so delish!!

    Side note---you neeeeeed these mules for fall. They're 50% off right now and they're SO comfortable. I bought them in black leather and dark camel. Definitely get a full size up, though. I always wear a size 8 and after reading the reviews I ordered a 9 and they fit like a glove. My mom and sister bought them too!

    Dessert was Simple Mill's pumpkin muffin mix baked in my favorite gold loaf pan with lots of mini chooclate chips and Breyer's vanilla ice cream on the side. NOM!!

    Speaking of Target, I've been finding the best stuff there. I basically decorated my bedroom there last week. I bought these two gray night stands (you can see them in this Insta picture), two marble and gold lamps, a white shag pillow, this adorable vase, this full length gold mirror, this set of mirrors, and this big ceramic and wood planter. Target is life!

      your cauliflower rice flavor combo sounds insaaaaaane!!! i've never thought of making it with more of a peanut sauce, but i'm totally trying that soon! and i've seen the simple mills mix everywhere and have yet to bake anything pumpkin-y this season so that's on my list, too!

      i'm about to be moving soon so thank you for your rec on their decorations!!! friggin' love that place!
