Hello from a tired and hangry and it’s-so-very-much-that-time-of-the-month Hummusapien.
Let’s all cry when we stub our toe and crave smoothies and popcorn and bean balls all at once and be overly hormonal together!! Does that not sound like perfection?
Breakfast was my new favorite thing…DIY cereal! Basically I mix together oats with some other crunchy add-ins, cinnamon, fresh berries and banana, and lots of almond milk. It’s way more interesting than cereal and actually keeps me full for a few hours. Basically it’s raw oatmeal!
Into the mix went half a cup of old-fashioned oats, a few chopped walnuts, a sprinkle of ground flax, cacao nibs, a small handful of Power O’s, cinnamon, sliced banana, blueberries, strawberries, and lots of unsweetened vanilla almond milk. The sweetness comes from the fresh fruit and it’s so dang good!
I also had coffee with almond milk, of course. Holler in the comments if you have a favorite brand of whole bean coffee. I need a good one!
I had to run around the city buying a million things for Alchemy so by noon when I was still far from being done, I scarfed down the rice cakes and hummus I packed follow by my apple with peanut butter….all in the car. Snacks before lunch for the win!
By 3pm I still hadn’t had a chance to eat my real lunch, so I snacked on a Vegan Zucchini Banana Chocolate Chip Muffin in the car. Why does it seem like all I do is eat in the car these days?! Eye roll.
P.S. If you don’t want to or don’t have time to make homemade muffins, you must try Simple Mills. It takes literally two minutes to make the batter and they come out amazing every time. We make the pancakes pretty much every Sunday and alternate between the vanilla cake (baked in a muffin tin) and banana muffins mix (we always add chocolate chips) for weekly snacks. Easy, delish, and healthy—what more could you need?
I prepped the best salads in a jar this past weekend and I’ve been loving them for lunch. I used this recipe as a guide. The chickpea salad is AMAZING—I really loved the celery and fresh parsley in there.
I layered chickpea salad, wheat berries (farro is amazing too, I just didn’t have any), shredded carrots, and arugula. It made five salads. I’ve already had two and I know I won’t be sick of it by the end of the week. Highly recommend!
When I got home I was craving a smoothie like no other. I blended up frozen cherries, frozen banana, cacao, Skoop chocolate protein (buy it and thank me later), frozen spinach, stevia, and almond milk. I was far too lazy to measure anything. On top went some Power O’s for crunch and post-picture peanut butter for creaminess because you know I need any and all textures during every meal and snack sorry bye.
Literally immediately afterward (like, I barely put the spoon down) I dove into the popcorn bag. I ate it so fast it was like I was being timed for speed. The period monster, I’m telling you. Sorry dad and any other males reading this.
We ate dinner pretty late, but it was incredible. I had made a batch of my beloved vegan meatballs over the weekend so prep was a breeze. We combined whole wheat pasta, tomato basil marinara, and vegan meatballs then had salad and roasted broccoli on the side. I love when I can feed my hangry carnivorous boyfriend stuff like this. He ate six bean balls and couldn’t stop saying “mmmm!” The ultimate compliment, if you ask me.
Dessert was random chocolatey goodness from the fridge. Lord knows I was too hangry to photograph it!
