    Helllooooo turkeys!

    I ate a shiz ton of oatmeal and Thanksgiving food of all shapes and sizes this week. Who else is obsessed with this time of year and all the food that comes with it?

    Breakfast

    Two eggs fried in algae oil with avocado toast + local micro greens. I tried Vital Farms eggs for the first time because they were on sale on Kroger and holy moly, those are some beautiful yolks! I'm usually a two slices of toast kind of gal, but this morning I wasn't as hungry. I also had coffee on the side. ALWAYS COFFEE!

    The best poached eggs with garlicky parm focaccia and avocado from Northstar. Plus coffee and several bites of ricotta pancakes with banana and maple syrup. Mmmmmm.

    ALL KINDS OF OATMEAL! I've been making big batches for Jeff and I to eat all week. I doΒ 2 cups of steel cut oats with 4 cups of water, 4 cups of almond milk, a pinch of salt, and a few chopped dates. Boil and cook on low, stirring often, until thick and creamy. Then stir in like a teaspoon of vanilla, top, and devour! This version had microwaved frozen Wild Blueberries andΒ almond butter.

    Lunch

    I've been eating lotssssss of soup. Love this Golden Lentil Soup!

    Dinner

    A mish mash bowl of TRISM goodness.

    Lentil Loaf, Sweet Potato Casserole, Green Bean Casserole, stuffing (recipe coming tomorrow!!!), and cranberry sauce.

    Trader Joe's wild salmon, brown rice, and green beans (all previously frozen) with salad and wine. I defrost the salmon the night before so dinner is super quick and easy.

    Snacks/Dessert

    Cookies! Jeff and I were craving chocolate chips cookies Friday night so we did a taste off between Annie's and Tollhouse break and bake. Annie's had more chocolate chips, but I thoughtΒ Tollhouse tasted better overall. Jeff liked Annie's best!

    Larabar maple cinnamon nut & seed crunchy bar.Β  These are SO much better than the original kinds. This flavor was my fave!

    Chocolate chip cookie dough RX bar. Highly recommend this flavor.

    My friend Lauren made homemade apple pie for Friendsgiving. Sooooo good with vanilla ice cream!

    Croissant and jam wrapped brie! I made this as our Friendsgiving appetizer and it was incredible. I spread raspberry jam and a few walnuts on Trader Joe's croissant dough, placed the brie in the middle, and then did the same on top. I baked it at 350F for 25 minutes and served it with crackers and grapes. So easy and amazing!

      Stahhhppp, I can't even with that croissant wrapped brie recipe! And I don't even LIKE brie! Also all your oatmeal recipes are making me so jealous right now because I don't use the stovetop here at college so I haven't had my good stovetop oats in a hot sec and can't wait to go home next week and eat ALL THE OATMEAL (er I mean Thanksgiving foods hehe)

        Hey! I just googled "croissant wrapped brie" and kind of winged it. I spread raspberry jam and a few walnuts on the dough, put the brie on top, put more jam and walnuts on top of the brie, and wrapped it up in dough. Baked it at 350 for like 25 min!

      vital farms has the BEST eggs!! and algae oil?!?! definitely need to look that one up! i've been super into oats lately too, since it's a little too chilly for morning smoothies (even in LA!). looking forward to your stuffing recipe!! πŸ™‚
