Jeff and I celebrated our two year anniversary last Sunday! We’re headed to Denver tomorrow for a special long weekend together.
So far we’ve traveled together to Cincinnati Louisville, Telluride, Harbour Island, and Italy.
After Denver we’re headed to Park City for another ski adventure. Instead of buying gifts for each other, we travel. It’s one of those special aspects of our relationship that I adore so much. We really value experiences over material things.

In other news, I’ve had a cold ever since last Thursday so I’ve been downing veggie soup and tea. Hoping for relief soon! Onto the eats.
Breakfast
The most epic Fox and the Snow breakfast sandwich + coffee with almond milk.
PB&J toast with raisin almond crunch granola + avocado toast with local micro kale from our CSA. I’m obsessed with Trader Joe’s sprouted whole wheat berry bread!
Simple Mills pancakes with blueberries, almond butter, and maple syrup. And a few bites of Jeff’s eggs.
Loaded smoothie with frozen wild blueberries, frozen cauliflower, fresh spinach, peanut butter, hemp seeds, cacao, vanilla protein, maca, and almond milk.
Lunch
The Soul Bowl from TRISM with black rice, chipotle sweet potato hummus, maple tamari roasted tofu, sautéed greens, cabbage slaw, and cornbread croutons.
Garden Vegetable Soup with roasted veggies, crackers, and hummus.
And again and again.
Dinner
Anniversary dinner! Gnocchi with pomodoro sauce + roasted garlic bread and arugula salad.
And again and again.
Wild salmon marinated in Trader Joe’s island soyaki sauce with frozen brown rice and the most AMAZING roasted delicata squash + salad.
Snacks/Dessert
Hot chocolate (almond milk, cocoa, maple syrup, vanilla salt) with Trader Joe’s mini chocolate hazelnut biscotti.
A cold-fighting smoothie with half orange juice half almond milk, strawberries, banana, peanut butter, cauliflower, spinach, and spirulina.
My favorite Trader Joe’s olive oil popcorn.
The most legit Hershey’s brownies.
The most amazing cheese plate + spooky pizza snake my friend Katie made for our pumpkin carving party!
Freezer stash of Cookie Dough Protein Bars.
Larabar chocolate hazelnut bites. I hear they’re delish frozen!

I’m from the Midwest and am attending graduate school in Fort Collins, which is one hour north of Denver. There is so much to do out here! Have fun!
There is SO much to do in Denver, I moved here a couple months ago and love it!! And your timing with the weather is perfect 😉 ‘Denver Central Market’ is a really fun market-style eatery I think you would enjoy! (with some of the BEST unique fresh-made ice cream)
Happy anniversary! My husband and I go on trips instead of gifts and it’s the best. Experiences for the win! I couldn’t help but notice that Jeff didn’t have almond butter on his pancakes… does he not like it?? My guy really doesn’t like any nut butters and it just baffles me. I’m over here eating it by the spoonful. Ha! Boys… Anyway, have an awesome trip! Can’t wait to hear about it 🙂
Happy Anniversary!! Have a blast in Denver this weekend. We moved here in May from the Midwest and just love it! I recommend hitting up Avanti ONLY if the weather is chill and you’re able to eat outside. It’s a wonderful eatery with a huge outdoor patio overlooking the downtown high rise buildings. Delicious food… definitely recommend the arepas! Snooze is also a tourist favorite but go early to avoid 1+ hour wait times! Radha Govindas is an all vegan buffet that is delicious. It is off the beaten path but everything is made fresh in house!

YES! Welcome to Denver!! I love living here and have lots of recommendations! Depending on where you’re staying… check out beast + bottle in Capitol Hill (great dinner small plates), VERT Kitchen on Pearl St (banging lunch/breakfast), Tupelo Honey downtown (not a Denver local company, but amazing brunch), Linger in the Highlands (small plates), Sweet Cow or Little Man for ice cream. Blue Pan Pizza is a sister store to Brown Dog Pizza in Telluride if you loved that- they have 2 shops open in Denver now. I could go on… Places to check out: Denver Art Museum is amazing, Wash Park or Sloan’s Lake for a nice walk, Red Rocks for some hiking, 16th St Mall for downtown exploring, Union Station. My twin sister came down with a cold on the day she and her husband returned from their honeymoon then he caught it. I, unfortunately, got a cold the week before my husband and my one year wedding anniversary. We still had the best time (!), but we had scheduled an anniversary photo shoot. I loved every minute but am anxiously awaiting the photos and hoping my red nose didn’t peak thru. 😉 Now my husband has it. ‘Tis the season I suppose!
