I’m gonna cut right to it—the past month has been a bit of a struggle for me. I’ve been feeling a big whopping lack of clarity with what I want in certain aspects of my life. The vision for my future feels kind of fuzzy. Like I’m going through the motions but nothing’s happening. You ever been there? Who can relate? I’m trying to be grateful for the ups and learn from/embrace the downs, but it sure ain’t easy when you feel like things are stagnant.
I’m working on figuring it all out, business and beyond. For now, let’s dive into the yummy fuel that’s keeping my head above water as of late!
Overnight steel cut oats warmed in the morning with strawberries, banana, peanut butter, mulberries, and cinnamon.
Frozen blueberry waffles with heated wild blueberries, almond butter, and maple syrup.
Warmed peaches! Slice up a couple ripe peaches and cook on medium low in a little butter, coconut sugar, cinnamon, and vanilla.
So good on top of frozen blueberry waffles almond butter and maple syrup. Can you tell I’m on a waffle kick?
Jeff brought me home a chocolate croissant and an iced almond milk latte when I was having a rough day Sunday. The freaking sweetest!
Two scrambled eggs, half a honey wheat bagel with lemon za’atar hummus, fruit, and coffee back home at my parents’ house.
Brunch at Katalina’s that we inhaled before I remembered to take a picture. I had a torta with refried beans, corn, avocado, tomato, and dressed greens and we shared the nutella pancake balls.
Power Bowl at Alchemy Grandview with ancient grains, pesto, potato hash, purple kraut, hummus, micro greens, and hazelnuts.
Grilled wild sockeye salmon (frozen from Costco), salad, grilled asparagus and shishito peppers, and local corn with butter and salt. The ultimate summer meal!
Pesto pasta with grilled balsamic zucchini and tomato cucumber salad.
Summer Vegetable Lasagna Skillet and salad.
Roasted buffalo chickpeas, green goddess dressing (cashews, hemp seeds, lemon, parsley, salt, garlic, pepper, water), greens, avocado, and leftover cabbage slaw.
Siggi’s vanilla yogurt with currant jam, peanut butter, and granola.
Breyer’s vanilla ice cream with peanut butter and chocolate chips.
So Delicious coconut almond bar. SO impressed with this one!
Almond Butter Zucchini Bars (a must-make for summer!) with ice cream.
Stove top popcorn. The BEST.
We affectionally call these naturally flavored sour gummy worms and gummy bears “car candy” because Jeff keeps them in his car. He gets them from Lucky’s Market and we’re obsessed.
Homemade iced almond milk latte! First I made an espresso in my Espressotoria. Then I blended it until frothy with about 12oz almond milk, splash of maple syrup, and vanilla. Serve over ice!
Toast with cilantro lime black bean spread, tomato, avocado, egg, micro greens, and salt.
I don’t have any style photos (sorry, slacking!) but I did do some online shopping in honor of the Nordstrom Anniversary Sale! I haven’t bought workout clothes in literally years so I wanted to share the awesome stuff I got on major sale. I’ve been wearing the same Zella leggings since college and don’t have any of the high-waisted ones so I was pumped to find those. (I have a Nordstrom debit card so I got early access to the sale. If you don’t have a card, you can shop the sale next week!)
