What I Ate and Wore This Week

    Published Mar 21, 2018 Β· Modified Apr 13, 2019 Β· by Alexis Joseph Β· 12 Comments

Yesterday I found a Lindt dark chocolate truffle in my pocket so you know it was a good day.

    Breakfast

Still on the toast kick! TJ's sprouted wheat berry toast with almond butter, coconut, red pepper flakes, salt, and honey and one with hummus, capers, and arugula.

My Creamy Chocolate Blueberry Shake. So satisfying!

Strawberry avocado toast and regular avocado toast with scrambled eggs.

Pancakes with microwaved frozen wild blueberries, almond butter, and maple syrup (I listened to my tummy when it was full after two) plus some of Jeff's eggs with micro pea shoots from our CSA. My micro green obsession is so real.

Green smoothie with pineapple, banana, hemp seeds,Β  peanut butter, ginger, spinach, kale,Β orange juice and almond milk.

Breakfast sammie on the go with avocado and a fried egg.

The most superb brunch spread! I made my Broccoli Mushroom StrataΒ for the main dish. We also picked up a couple chocolate croissants from Pistacia Vera for a little something sweet and I made fruit salad and bacon for the boys.

    Lunch/Dinner

Vegan Power Mac and Cheese! I can't get enough.

I made roasted green beans (frozen green beans with oil, balsamic, salt, and pepper) and roasted sweet potatoes to have on hand for lunches. I combined them with lightly roasted baby bok choy leaves, chickpeas, Costco's jarred artichoke hearts, tahini, and avocado for little lunch bowls. So yummy!

Salad with butternut squash, almonds, and red onions with pan-fried salmon and sautΓ©ed veggies from The Crest.

Tomato Basil Veggie Burgers in a chard leaf with ketchup, mustard, and chipotle aioli plus a pickle, pan-fried potatoes, and cabbage slaw on the side.

Harvest mushroom pizza, pimento cheese dip with toast, and shishito peppers after drinks with friends on St. Patty's!

Cast-iron salmon with quinoa and sautΓ©ed veggies.

Kale and Quinoa Salad with cream of potato soup, fresh pineapple, and strawberries.

Takeout spread from Lavash with hummus, baba ganoush, rice, pita, the most amazing fattoush salad, grilled veggies, and plenty of hot sauce. I went back for round two, don't you worry.

I also baked these wraps into chips to have with some lunches and they were amazingly tasty and crunchy!

    Snacks/Desserts

    More yummy LarabarΒ car snacks.

Coconut vanilla granola bites.Β  So so so good!

Chocolate Zucchini Bread inspired by this recipe. The recipe isn't good enough to share yet but do yourself a favor and make those epic muffins. Also very much digging Breyer's new vanilla peanut butter almond milk ice cream.

    Style

You know I love wrap tops and this denim one is no exception. It's shorter and looks awesome with high-waisted jeans but it runs bigger so I'd recommend sizing down.

I could rave about the black booties for days. MyΒ ripped black jeans are crazy comfy and half off right now!

Similar look with my favorite high-waisted jeans and Tom's black suede booties (sold out but these are very similar). Literally the most comfortable heels you'll ever own. My shirt is from Abercrombie last year.

This dress is on sale for half off! Definitely size down.

If you follow me on Instagram, you'll see I post a lot of fashion finds in my stories. My latest favorite purchases include this adorable one-piece bathing suit, this other great one piece that I found from Target, this fun red coat from Nordstrom Rack, these mules for Spring, these amazing open toe Tom's booties, and this comfy camo tee with ruffle sleeves (perfect tucked into high-waisted jeans).

I hope the rest of the week exceeds your expectations, friends!

Haha it's always a good day when you find chocolate! I totally didn't know Breyer's made almond milk ice cream. I'll have to try it out! I have a serious love for PB so I'm already pretty sure I'll love it πŸ˜‰ .

Lavash seriously has THE BEST fattoush salad. The very first time we ate there I told the owner the same thing and was kindly rewarded with baklava. Been obsessed with them ever since. πŸ™‚

Can I ask--where do you get almond milk Breyers around Columbus? I found a carton once at Meijer, and loved it, but haven't been able to find it since!
