Sweet Potato Chili

The best Sweet Potato Chili, packed with bold flavor. Smoky, savory, and sweet, this healthy vegetarian chili is perfect for cool nights and tastes amazing the next day. Serve with cornbread!

Step 1: Warm oil in a large pot. Once hot, add onion and sauté for 3 minutes.

Step 2: Add garlic, carrot, pepper, jalapeño, and sweet potatoes. Cook for 5 minutes, stirring often.

Step 3: Add chili powder, cocoa powder, cumin, smoked paprika, oregano, 1/2 tsp salt, and pepper.

Step 4: Cook for another minute, until fragrant.

Step 5: Add tomatoes, tomato paste, beans, and broth, stirring to combine.

Step 6: Simmer uncovered, stirring often, for 50 minutes, or until sweet potatoes are tender. Season to taste with salt.
