Pumpkin Baked Oatmeal

Easy Pumpkin Baked Oatmeal makes the best portable healthy breakfast! Made in 1 bowl, this scrumptious fall baked oatmeal recipe is gluten-free, dairy-free and kid-friendly!

Step 1: Preheat oven to 350F. Grease baking dish. Whisk oats, pumpkin pie spice, salt, and baking powder.

Step 2: Add pumpkin, milk, honey, peanut butter, eggs, and vanilla. Whisk until well-combined.

Step 3:  Fold in chocolate chips.

Step 3: Pour into baking dish. Bake for 35 minutes. Cool sightly, slice, and devour!
