Healthy Tuna Noodle Casserole

Creamy, comforting Healthy Tuna Noodle Casserole made from scratch! Packed with veggies like mushrooms and peas, just as satisfying as the original. Dairy free!

Step 1: Boil noodles until just al dente. Place cashews in a bowl and cover with water.

Step 2: Melt butter in a large skillet over medium heat. Add onion and celery. Cook for 5-7 minutes.

Step 3: Add mushrooms and garlic and cook for another 5 min.

Step 4: Stir in flour and cook for another minute.

Step 5: Preheat oven to 350°. Grease a large dish. Drain cashews. Blend with 2.5 cups water, until smooth.

Step 6: Pour in cashew cream and nutritional yeast and whisk well.

Step 7: Add peas and cook for 5 min. Add tuna, noodles salt and pepper.

Step 8: Pour into baking dish. Top with breadcrumbs and a pinch of salt and pepper. Bake for 25 minutes.
