Cauliflower Stuffing

Cauliflower Stuffing with buttery mushrooms, tart apples, and pecans. A low carb, gluten free option for Thanksgiving or as a healthy side dish any night!

In a large mixing bowl, add cauliflower, onion, garlic, carrots, celery, mushrooms and apple.

Whisk egg, soy sauce, sage, thyme, melted and cooled butter, salt and pepper.

Pour over vegetables. Toss well to combine.

Divide mixture evenly between baking sheets. Roast for 20 minutes, rotating  pans halfway.

Remove pans from oven. Sprinkle pecans evenly, tossing with a spatula to combine. Roast for another 10 minutes.

Transfer to a serving dish if desired. Garnish with parley and serve!
