Butternut Squash Curry

Creamy, comforting Butternut Squash Curry with lentils! Packed with bright Thai flavors, this is the perfect cozy, healthy meatless main.

In a large skillet, warm oil over medium heat. Add onion, ginger and garlic and cook for 5 minutes.

Add curry paste and cook for another minute.

Add squash, coconut milk, lentils and sugar. Stir and bring mixture to a boil.

Reduce heat to low and simmer for 25 min. Add soy sauce, basil and peas. Remove from heat and stir in lime juice.
