When you read the words "vegan" and "gluten-free" in the same sentence as "muffin," you probably think...cardboard.
I fell in love with vegan and gluten-free muffins completely on accident. I had a surplus of oat flour to use up coupled with a growing love for almond meal. They both happen to be super easy, super free of gluten, and pretty dreamy when combined in muffin batter.
Obviously I have no issues tolerating gluten. But truth be told, my gluten-eating readers and clients started dropping like flies a year or so ago. All anyone cared about was coconut oil and gluten-free muffins and banana nice cream. Times change, and my job is to cater to the people! When the people want grain-free fun-free hockey pucks, I shall deliver.
I kid. I actually adore gluten-free baking. The reason I like pairing almond meal with oat flour is because the end product turns out so moist, not to mention lower in carbohydrates and higher in protein. Hayyy!
You don't have to be gluten-free to enjoy these recipes. There is no flavor nor texture sacrifice texture going on here. You'd never know they weren't bursting at the seams with gluten galore. I do solemnly swear.
Whether you're gluten-free because you have celiac or because you have an intolerance or because you think wheat is the worst thing since sliced bread or because your grandma said so, I am here to help.

I feel like my kids get so much wheat and gluten in their diet that I like to switch it up and make GF muffins. They like them just as much as the gluten ones, so I'm happy to give them a variety.

Gluten lover here. Especially in bagel form.
I didn't have gluten when on the low-FODMAP diet and it really wasn't that bad, thanks to all the recipes out there. When I realized gluten didn't bother me, however, I went back to eating it.
I do think it is fun to switch up the flours I use, so I will certainly check these out!
