This crunchy and creamy Avocado & Egg Rice Cake is the perfect protein-packed snacked to keep you satisfied all afternoon.


  • 1 large sunny side-up or over easy egg
  • 1 brown rice cake (I like Lundberg Farms)
  • 1/4 an avocado, mashed
  • squeeze of fresh lemon juice (optional)
  • Sea salt
  • Red Pepper Flakes
  • Basil/cilantro/greens to garnish


  1. Cook egg to your liking.
  2. Spread avocado on brown rice cake. Add lemon juice and season to taste with salt and red pepper flakes.
  3. Top with egg and herbs or greens, if desired.
