I’m on Spring Break so I’ve had the pleasure of eating lunch at home this week.
I’m on Spring Break so I’ve had the pleasure of cooking green things for St. Patty’s day, sitting at coffee shops finishing (more like starting) scholarship applications, and babysitting lots lots lots.
Spring Break isn’t so breakish.
I still have a bunch of lunch pics I snapped last week, so I thought I’d share. Use it as lunchbox inspiration for work next week!
Sticky orange tempeh (amazing) with brown rice and peas, a pear and a larabar for snack.
Enter the lazy lunch: an Amy’s non-dairy burrito, cucumbers with hummus and grapes.
Copycat Northstar buddha bowl, grapes and blueberries, larabar and apple for snack later.
Leftover salmon with brown rice and green beans, larabar and blueberries with grapes.

Oh hey there, recycled Instagram picture. I’m been loving steel cut oats from the bulk bin at Whole Foods. I make one cup so I have enough for four breakfasts. Add a hefty dose of ground flaxseed, some frozen mixed berries thawed in the microwave and a big spoonful of almond butter. Hi there, daily breakfast. You’re really pretty.
I literally eat dark chocolate every single day. Hey, it’s a superfood, right? Pair it with a strong cup of coffee and prepare to dieeeeee.
