    Lovely Meals Lately: Week of 07-14-2021

    Howdy, friends!

    Max is growing like a WEED. I cannot belieeeeve he's almost six months old!

    Lovely Meals and Snacks

    Pretty much every morning during the week I have some kind of muffin (I made my healthy zucchini muffins last week) with coffee when I pump around 7am.

    Then we eat my overnight steel cut oatmeal with fruit and nut butter plus a variation of eggs around 8:45am. It keeps me full, and I have less decision fatigue deciding what to make!

    We eat out on the weekends or make something fun and different like omelets or pancakes!

    Bagel egg sammies for brunch from The Lox! My favorite combo lately is a sea salt and herb bagel with beet thyme cream cheese, scrambled egg, and lettuce. Divine.

    Have you ever made smashed potatoes? I had a three pound bag of Yukon golds and this recipe did not disappoint! Crispy, salty perfection. It's always fun to prepare stuff in new ways.

    Cucumber and tomato salad with the best veggies from our CSA box. I tossed them in apple cider vinegar, olive oil, kosher salt, pepper, fresh basil and parsley.

    We made a meal out of the potatoes, cucumber salad, and grilled wild ahi tuna steaks (defrosted from frozen then I pour over a good splash of soy sauce, avocado oil, ginger, sriracha, garlic powder and lots of pepper).

    Spaghetti and meatballs with fresh basil! We tried this new Mezzetta marinara that was on sale and it was amazing.

    Chocolate croissant from Pistacia Vera while my friends and I walked the babies!

    Green smoothie with frozen mango, banana, fresh kale, peanut butter, lime juice, ginger, and a couple leaves of fresh basil. Amazing combo! I always think these kind of combos are too simple to post, but I want to post this gem soon!

    Coooookies! I tried a new recipe but I decided I still prefer my almond flour cookies. I'm obsessed with them made with melted butter.

    Omelettes! We sautéed peppers, zucchini, tomatoes, and spinach and then made omelettes with the veg plus freshly grated sharp Tillamook cheddar. Amazing with avocado toast and cherries!

    Amy's frozen burrito for an easy 5pm snack when I need fuel before dinner! Love these dipped in hummus with hot sauce.

      Looks like some amazing breastfeeding fuel right there! I could literally eat all of this and more when I was still EBFing. Going to save this post for my next kid!

      Incredible meals! I love the sound of that smoothie. I made a banana mango smoothie with pb last night for a snack. The addition of these other ingredients and flavors sounds next level. Thanks for the inspiration!
